Ingredients For Peppermint Crunch Cookies

  •  2-3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup, 2 sticks, butter
  • 1-1/2 cups white sugar
  • 1 egg
  • 1/4 teaspoon peppermint extract oil
  • 6 ounces white candy melts
  • 24 peppermint candies, divided

How To Make Chewy Crunch Peppermint Cookies

Preheat the oven to 375 and line a baking sheet with parchment paper. Set aside.  Divide candies in half. Crush 12 candies and place them into a small bowl. Repeat placing the other candies into a separate bowl. 

Mix together flour, baking soda, salt, and baking powder and set aside. 
In a bowl, beat together butter and sugar until fluffy, about 3 minutes.

Add egg and extract and beat well. Beat in dry ingredients just until combined. Fold in one bowl of crushed candies. 

Peppermint Crunch Cookies

Using a tablespoon portion scoop, scoop dough onto a baking sheet and place 2″ apart. Bake for 9 minutes. Remove from oven and let cool on a baking sheet for 2 minutes before transferring to a cooking rack to cool completely. 

Line a baking sheet with wax paper. Melt candy melts according to package directions.

Dunk half of the cookie into the candy melts and wipe off excess. Place onto the wax paper baking sheet and sprinkle with crushed candies.

Repeat until all cookies are coated.  This recipe makes 4 dozen.

Crushed Candy Canes

Do you have extra crushed candy canes lying around? Those are the perfect pieces to use to jumpstart this dessert if you don’t have any peppermint candies on hand.

Storing

Since these holiday cookies have a nice peppermint feelt to them, they really do give off that essence. So, do not store them with other cookies you have made as the scent travels.

It is my suggestion to give this batch their own container. This will preserve all the other cookies you have on hand and not mix and match the flavors. Believe me, peppermint will overpower just about anything!
