Brownie Mix Cookies Recipe
Semi-homemade and so easy for the children to make on their own. This chewy brownie recipe incorporate chocolate chips, but consider adding in caramel chips or walnuts instead if you prefer those flavor profiles.
Fudgy and rich and ready to party! Stack two together to make ice cream sandwiches. Drizzle chocolate syrup and top with whipped cream to create the perfect sundae. The options are endless!
As a note, I baked 6 of these cookies at a time because they spread out into large 3″ cookies while in the oven. Now, let’s get right to the ingredients.
Ingredients:
- 1 box, 18 oz, dry brownie mix
- 1/2 cup, 1 stick, butter, softened
- 3 tablespoons of Egglands Best Egg Whites
- 1 cup mini chocolate chips
How To Make Brownie Mix Cookies
Preheat oven to 350 and line a baking sheet with parchment paper. Set aside. Add brownie mix to a mixing bowl. Add butter and combine well.
This takes a little work and using the back of the spoon works best. The dough will be stiff. Add your Eggland’s Best egg whites and mix.
Fold in chocolate chips.
Use a tablespoon portion scoop to scoop dough onto the prepared baking sheet. Gently press dough until it’s 1/2″ thick. Bake for 10-12 minutes or just until edges are set.
Remove from oven and let cool on baking sheet for 2 minutes before moving to a cooling rack to cool completely. Repeat until all cookies are baked and cooled.
