We are such huge fans of cherries and using them in desserts because you can keep pie filling or maraschino cherries on hand without worrying so much about expiration dates. I love pulling from my pantry!

Cherry Bar Ingredients:

  • 3 cups flour
  • 1 teaspoon salt
  • 1 cup, 2 sticks, butter, softened
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 2 cans, 21 oz each, cherry pie filling

Vanilla Glaze Ingredients:

  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 tablespoons milk

How To Make Cherry Bars:

Preheat oven to 350 and grease a 15″ x 10″ baking pan with nonstick cooking spray. Set aside.

Add flour and salt to a small bowl and mix well. Set aside.

Cream butter and white sugar together in a mixing bowl until light and fluffy. About 3-5 minutes. Add eggs and vanilla and beat well. Add flour to the bowl and slowly mix until combined.

Spread 2/3 of the batter into the bottom of the prepared pan. I like to cover my hand with a sandwich bag generously sprayed with nonstick cooking spray. Use the covered hand to press the dough into the bottom of the pan.

Top with cherry pie filling, spreading cherries in a single layer. Place teaspoon sized dollops of remaining dough on top of the cherries.

Bake these cherry bars for 35-40 minutes or until golden brown. Cool completely in pan.

To make the Vanilla Glaze: Add powdered sugar, vanilla, and milk in a small bowl and mix well. Drizzle on top of bars. Cut and serve your cherry squares.

Can I Swap Out The Fruit For This Recipe?

If you’d like to swap out the main fruit from this cherry bars recipe and make these strawberry bars or blueberry bars instead – go right ahead! All you have to do is replace your pie filling with your flavor of choice! It will work out exactly the same.
