Ingredients For Cherry Cheesecake Brownies
- 1 box, 19.9 oz, brownie mix and ingredients to make brownies
- 1 brick, 8 oz, cream cheese, softened
- 1 teaspoon vanilla
- 1 egg
- 1/2 cup white sugar
- 2/3 cup (about a 10 oz jar) maraschino cherries, drained and quartered
- 1/2 cup mini chocolate chips

How To Make Cherry Cheesecake Brownies
Preheat oven to 350 and grease an 8×8 baking pan with nonstick cooking spray. Set aside.
Prepare brownie mix according to package directions. Pour batter into prepared pan. Set aside.
In a mixing bowl, add cream cheese and beat well until smooth. Add vanilla, egg and sugar and beat well until smooth and creamy.
Fold in cherries and chocolate chips. Spoon onto top of brownies. Use a knife to swirl the cream cheese mixture together with the bottom layer.
Bake the brownie mixture for 45 minutes (up to 50 minutes) or until the center comes out clean when a toothpick is inserted in the center. Let the cherry cheesecake brownies cool completely before cutting them into 16 bars.

Baking Tips
I always like to grease my pans before baking, but you could also line your pan with parchment paper. This will make it easier to lift up your brownies once they are done baking.
Make sure your cream cheese is softened before you get started. I am someone that never remembers to take ingredients out beforehand… ever. So, I usually just throw what I need in the microwave for about 20 seconds. That is good enough. Just as a heads up, this goes for melted butter as well.
When you are swirling the brownie layer, make sure that you don’t overdo it. You want to combine but not to the point that you don’t see the layers.
