White bean soup with ham is a very popular dish in my house and so I wanted to share a recipe with you that you could replicate in your crock pot. We love the taste of sausage and beans and this slow cooker bean soup recipe will satisfy every flavor request your loved ones have on their dinner list! 

There are a few different ways you can get your crockpot bean soup recipe prepared. Fresh ingredients are truly the best way to start! During the colder months, we love to serve this dish alongside a loaf of fresh bread and guess what? It only takes about 10 minutes to prepare.

For this recipe, we use canned beans because they are the easiest to manage. I know there are plenty of healthy bean soup recipes online that ask for fresh beans, but mama ain’t got no time for that! Sorry! this is a canned blog and I am proud of it! 

Ingredients For White Bean Soup In The Slow Cooker 

  • 1 TBSP olive oil
  • 1 package thinly sliced smoked andouille sausage (12.8 oz)
  • 3 cloves garlic (minced)
  • 1 onion (diced)
  • 3 carrots (peeled and diced)
  • 2 stalks celery (diced)
  • 2 cans (15-oz) Great Northern beans (drained and rinsed)
  • 1/2 tsp dried oregano
  • 2 bay leaves
  • 4 C chicken broth
  • 2 C water
  • Salt and black pepper (to taste)
  • 3 C baby spinach

How To Make Slow Cooker Bean Soup Recipe

  • Prep: 10 min
  • Cook: 8 hrs
  • Makes: 8 servings

In order to make this healthy bean soup, first, you need to add olive oil to a skillet on medium-high heat. Carefully add sausage stirring often until the sausage is cooked and lightly browned. (about 3-4 min)

Transfer the sausage to the slow cooker. Add garlic, onion, carrots, celery, beans, oregano, and bay leaves. Add the can of broth and the water, Stir to combine all ingredients. Add salt and pepper to taste. Stir well.

Cover while cooking on low heat. Continue to cook this healthy bean soup for 7-8 hours. (Or cook on low heat for 3-4 hours if you don’t have the time) 

For your last step, add in your spinach. Stir until the spinach is wilted. Serve this sausage soup recipe while hot and enjoy! Seriously, it’s one of our favorites during this time of the year and I truly hope you soon will feel the same.

Can I Freeze This Slow Cooker Bean Soup Recipe?

Absolutely! You can freeze any leftovers you have from this crockpot bean soup recipe. If you want to make a larger batch than you need, just place any extras in an airtight container or a freezer bag and then place it into your freezer for up 2 months.

When you are ready to serve your soup again, simply thaw the soup in the fridge and then heat it up in a pan over low heat.

I Don’t Have Any Bay Leaves! Can I Use Something Else?

Listen – I am a big advocate for using what you have. If I don’t have a bay leaf, but I happened to have some thyme or rosemary… I use it. If I don’t have any garlic cloves, but I have garlic powder… I use it. I don’t freak out. Use what you have and just know it is going to taste fantastic.
