Ingredients For White Bean Soup In The Slow Cooker 

  • 1 TBSP olive oil
  • 1 package thinly sliced smoked andouille sausage (12.8 oz)
  • 3 cloves garlic (minced)
  • 1 onion (diced)
  • 3 carrots (peeled and diced)
  • 2 stalks celery (diced)
  • 2 cans (15-oz) Great Northern beans (drained and rinsed)
  • 1/2 tsp dried oregano
  • 2 bay leaves
  • 4 C chicken broth
  • 2 C water
  • Salt and black pepper (to taste)
  • 3 C baby spinach

To make this healthy bean soup, first, you need to add olive oil to a skillet on medium-high heat. Carefully add sausage, stirring often until the sausage is cooked and lightly browned. (about 3-4 min)

Transfer the sausage to the slow cooker. Add garlic, onion, carrots, celery, beans, oregano, and bay leaves. Add the can of broth and the water, Stir to combine all ingredients. Add salt and pepper to taste. Stir well.

Cover while cooking on low heat. Continue to cook this healthy bean soup for 7-8 hours. (Or cook on low heat for 3-4 hours if you don’t have the time)
