Slow Cooker Chicken Noodles Soup – Asian Rice Noodles

This slow cooker chicken noodles soup recipe is the perfect meal to make when you want a hearty dish that doesn’t require a lot of fuss. Similar to your traditional chicken soup, but made with Asian rice noodles and seasoning. This dish is a great alternative when you’re looking to spice things up.

How do you make slow cooker chicken noodles soup? Combine onions, peppers, carrots, garlic, chicken, chicken broth and seasoning in your slow cooker and cook on high for 4 hours.

There’s just something about the combination of these ingredients that can fix just about anything.  Whenever one of my children is feeling down, they always ask me to make noodle soup!

And using the crockpot to whip it up has become my favorite way to do it. No-fuss. No problem.

Ingredients:

  • 1 TBSP olive oil
  • 1 yellow onion (chopped)
  • 2 red bell peppers (chopped)
  • 1 C carrots (shredded)
  • 1 TBSP minced garlic
  • 1 TBSP curry powder
  • 1/2 tsp cayenne pepper
  • 1/2 lime (juiced)
  • Kosher salt
  • 3 C chicken broth
  • 2 C rotisserie chicken (shredded)
  • 1/4 C fresh cilantro (chopped)

Garnish:

  • 2 tbsp. diced green onion
  • 1 package Asian rice noodles

How to Make Chicken Noodle Soup In The Slow Cooker

Add olive oil, onion, red bell peppers, carrots, garlic, curry powder, cayenne powder, salt, chicken broth, lime juice, and shredded chicken. Cook for 3-4 hours on high or 6-8 hours on low.

Prepare the rice noodles as written on the back of the package. Add rice noodles to your slow cooker. Cook your meal for an additional 1 30 minutes to heat noodles.

Prior to serving garnish with cilantro and green onions.
