This slow cooker recipe is one of those “dump and forget” kind of meals. You place everything into your slow cooker and you move on with your life. BLISS!

Not a lot of searing or browning involved since this is a vegetarian option. The only work you have to do is towards the end of the recipe where you need to mash the sweet potatoes.

But by that time, they will be super soft from the crockpot. I have a feeling you will be coming back to this one over and over again.

Ingredients For The Slow Cooker Sweet Potato Stew Recipe:

  • 2lbs (about 4) sweet potatoes, peeled and cut into 1/2″ chunks
  • 4 cups vegetable broth
  • 1 red pepper, diced
  • 1 small onion, diced
  • 1 cup water
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 1 can, 14 oz, coconut milk (unsweetened)
  • 1/3 cup tomato paste
  • 1/3 cup creamy peanut butter
  • chopped fresh cilantro
  • chopped peanuts

Add sweet potatoes, vegetable broth, pepper, onion, water, and spices in a slow cooker and mix well. Heat on low for 6-7 hours or high for 3-4 hours.

Use a potato masher to mash vegetables. Stir in coconut milk, tomato paste and peanut butter and heat on high for 30 minutes. Stir well before serving with chopped fresh cilantro and chopped peanuts.
