Ingredients
- 2 cups uncooked rice
- 1 cup water
- 1 cup vegetable stock
- ½ can whole kernel corn
- 1 can enchilada sauce
- 3 tsp taco seasoning
- 1 can black beans
- ½ red bell pepper – diced
- ½ green bell pepper – diced
- ¼ cup chopped cilantro
- ½ tsp salt
- 1 cup shredded cheddar cheese
- Crumbled cojita or queso fresca cheese for sprinkling
- Taco shells
How To Make Crockpot Taco And Rice
Combine rice, water, and vegetable stock in a large crockpot. Cook on high 1 hour.
Add in enchilada sauce, taco seasoning, black beans, corn, peppers, cilantro, cheddar, and then cook an additional 1.5-2 hours on high.
Serve on taco shells with cojita cheese and pico de gallo or in large bowls with your favorite toppings.
