Bacon French Toast Casserole Recipe

Bacon french toast casserole is the perfect dish to serve for a weekend brunch or breakfast. Simply combine bacon, eggs, and bread chunks and bake together in one dish. Then drizzle with maple syrup before serving. The perfect alternative to bacon and eggs!

Bacon French Toast Casserole Recipe

Ingredients: 

  • 10 slices white bread, cut into 1/2″ cubes
  • 8 eggs
  • 1-1/2 cups milk
  • 1/2 cup heavy whipping cream
  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 1/2 teaspoon maple extract
  • 1/2 teaspoon ground cinnamon
  • 1 lb bacon, cooked and cut into small pieces

Directions

Grease a 9×13 baking pan with nonstick cooking spray. Spread bread into pan. 
In a separate bowl, combine eggs, milk, whipping cream, brown sugar, maple syrup, extract and cinnamon and whisk well.

Gently pour egg mixture over pieces of bread. Press bread into liquid to soak up. Sprinkle bacon on top. Cover and refrigerate for 2 hours or overnight.

Remove from refrigerator 30 minutes before cooking. 

Preheat oven to 350 and bake, uncovered, for 40-50 minutes or until a knife stuck in the center comes out clean and top is golden brown. Cooking time varies according to your oven – please check towards the end of the process. Let stand for 5 minutes before serving.

Add an extra drizzle of maple syrup and one tablespoon brown butter if desired. You could also top with cinnamon sugar if you please. Serves 10-12.

The best fresh bread to use when baking your casserole is a sturdy one. Don’t use white bread or Italian loaves. Instead, go for something like sourdough or rustic whole wheat bread. The more texture your artisan bread has the better because it will make your toast all the more interesting to eat and enjoyable!

How to Freeze and Reheat This Breakfast Casserole?

Freezing this bacon casserole is incredibly easy. It’s perfect for those unexpected guests or as meal prep. Just make sure that you’re using sturdy bread like sourdough, brioche, or something in the style of a French baguette. This is so the toast holds up after being frozen and also reheated.

To freeze, just let it cool off completely. Then wrap it in two layers of cling film or aluminum foil and put it in a freezer bag. Label the foil with the date you’re putting it in the freezer so you’ll know when to use it up next and store in the freezer for up to three months.

When you’re ready to reheat, just let it thaw out overnight in your fridge. If you’d like to heat your meal faster, place it in a glass dish and cover it with tin foil. Then bake in the oven at 350 F for ten minutes. You can also heat it by popping it in the microwave on high for about three minutes.
