I am someone who absolutely loves bacon, egg, and cheese sandwiches but who also is a huge fan of pancakes and waffles. I feel like this cheesy bread pudding is the best of both worlds. It combines the flavors of that NY classic that I eat every weekend with the sweet splurge that I only get when I head to a diner.

The best part about this dish is you can prepare it ahead of time! I do this with my overnight french toast bake and it makes waking up knowing I have breakfast ready a TREAT. But you don’t have to! You can just whip it all together and serve. The choice is yours! If you have time, then prep. If not, then just eat. 😉

Ingredients: 

  • 1/2 lb bacon
  • 1/2 cup onion
  • 1 tablespoon minced garlic
  • salt and pepper
  • 6 slices white bread, cut into 1/2″ cubes
  • 6 eggs
  • 1-1/2 cups milk
  • 1/2 cups heavy whipping cream
  • 6 ounces shredded Swiss cheese
  • maple syrup, if desired

Note: My cheese is actually a package that is pre-shredded and contains Swiss and Gruyere cheese. Use this combination or any other that you find that works!

How To Make Maple Bacon Bread Pudding

Reserve 1/4 cup cheese and set aside. 

Cook bacon in a large skillet. Remove from pan and drain on paper towels. Then, when the pan is cool, cut the bread pudding into small pieces.

Discard the majority of the grease, leaving about 1 tablespoon in the pan, and add onion and garlic and cook until onion is tender. Season with salt and pepper. Remove from heat

In a large bowl, combine eggs, milk, and heavy whipping cream and whisk well. Stir in bread crumbs, bacon, onion mixture, and cheese. Mix well. Pour into skillet cover with foil.

Preheat oven to 375 and bake for 30 minutes. Remove foil and return to oven for 10 minutes. Top with cheese and cook until cheese is melted. Remove from oven and let stand for 5 minutes. Serve topped with maple syrup if desired.

This dish serves 8-10 people.

Tips To Consider

  • If you’d like to make this savory breakfast bread pudding into more of a dessert, consider adding in apples and drizzling additional caramel sauce on top before serving. This bread pudding is very versatile.
  • If you have a brunch or a bridal shower, this is the perfect potluck dish to bring. It is absolutely a crowd please and it a make-ahead option that won’t take up most of your morning.
  • You could always remove the bacon and substitute it out with another flavor profile of your choice.
  • Consider using Hawaiian rolls instead of white bread for a much sweeter taste.
