Low in carbs and high in protein, this breakfast option is also great for those who are on keto diets. Personally, we aren’t living that lifestyle, but we still make the combination time and time again.

  • 6 eggs
  • 1/2 cup cooked and chopped bacon (about 5 slices) 
  • 1 cup shredded cheddar cheese
  • 1 teaspoon thyme
  • salt and pepper

How To Make Cheesy Bacon And Egg Muffins

Preheat oven to 375 for dark pans, or 400 for bright, shiny pans.

Generously spray six muffin cups with nonstick cooking spray. Set aside. 
Add eggs to a mixing bowl and whisk well. Fold in bacon, cheese, and thyme. Season with salt and pepper and mix well.

Spoon mixture evenly into 6 muffin cups, filling them nearly to the top. 
Bake for 12-15 minutes or until toothpick in the center comes out clean. 

Remove from pan and serve these grab and go egg with bacon muffins immediately!  Makes 6 bacon and egg cups.

Meal Planning Options

If you double or even triple this recipe, you can freeze your egg, cheese and bacon muffins and have everyone microwave their breakfast dishes for the next few weeks.

We like to do this because as someone who meal plans as often as possible, it’s important to plan ahead. These bacon and egg cups are easy to make and easier to reheat!

The beauty about egg muffins? You can add whatever you want to bacon egg cups! Do you have some feta and tomatoes? Give your breakfast treat more of a Mediterranean twist.

Are you more of a mushroom lover? Chop them up and add them in with some onions! It all works. No, literally. Anything you have in your refrigerator will work.

Tips To Help You Make The Perfect Egg Muffin

I want to offer three quick pieces of advice to you regarding these cheesy bacon and egg muffins. When filling up your muffin tins, be sure to only fill them 3/4 of the way. Remember, eggs rise.

Also, don’t be afraid to season your mixture. I didn’t include it in the recipe, but if you have garlic salt, garlic power, or onion powder, it could really step up the flavor profile of your eggs.

We like to use fresh garlic and onions when making egg muffins at home, but sometimes we run out of ingredients right when you need them. When in a pinch, powders will do. Last but not least, don’t forget to grease your pan.
