My full confession is that this classic comfort food dish is probably one of my favorite meals to serve to the kids – EVER. There are so many different variations you can make as well. Throw in a green bell pepper, turn it into a cheeseburger tater tot casserole, or spice things up and add some kick in a few steps to whip this baseline into a Mexican tater tot casserole. That’s what I love most. And the bonus? It’s just as good the next day when you eat it the second time.

If you have extra veggies, feel free to add those in – even frozen vegetables. Whatever works. I’m telling you, this one-dish meal baseline is a game changer… even for picky kids.

We created this recipe with pieces of diced ham in the mix. If you aren’t a fan, please feel free to omit or substitute with something you’d rather have in the dish. That is the beauty of baking and cooking – we can tweak as we go!

Ingredients:

  • 1 cup diced ham
  • 1/4 cup diced onion
  • 6 eggs
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheese
  • 1 bag, 16 oz, frozen tater tots (you can keep frozen)

Preheat oven to 350 degrees and spray a 2.5 qt casserole dish with nonstick cooking spray. Sprinkle ham and onion in the bottom of the dish.

In a mixing bowl, add eggs, milk, and spices and whisk well. Next, you will want to stir in the cheese. Then pour your egg mixture over the ham and onions. The next part of this tater tot breakfast casserole is my favorite.

How To Freeze This Classic Casserole

Yes, you can absolutely prepare this dish ahead of time and then freeze it for later use. Follow the instructions as written above and then tightly secure your casserole dish with oven wrap.

When you are ready to serve this dish to your family and friends, allot an additional 10-15 of cooking time on the backend. Check at the ten-minute mark. If you feel like your dish needs more time, give it another 5.
