Chicken Tater Tot Casserole Recipe

This chicken tater tot casserole is a chicken dinner you can make from scratch that will satisfy every family member at the dinner table. Chicken breasts, tater tots, peppers, shredded cheese, and diced peppers! A make-ahead dish that you can turn to over and over again.

Chicken Tater Tot Casserole

Whenever I whip up this recipe, I feel like it has the same essence as a chicken pot pie but it’s just SO much easier to prepare. If you have peas on hand, throw them in. Is there a head of broccoli about to go bad? Chop it up! That’s the beauty about casseroles – everything works. For now, here’s the base:

Ingredients:

  • 1 pound cooked chicken breasts
  • 1/4 cup diced onion
  • 6 eggs
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheese
  • 1 diced pepper
  • 1 bag, 16 oz, frozen tater tots (you can keep frozen)

How To Make Cheesy Chicken Casserole With Tater Tots:

Preheat oven to 350 degrees and spray a 2.5 qt casserole dish with nonstick cooking spray. Sprinkle the chicken, peppers, and onion in the bottom of the dish. 

In a mixing bowl, add eggs, milk, and spices and whisk well. Next, you will want to stir in the cheese. Then pour your egg mixture over the chicken mixture. 

Top with frozen tater tots in an even layer. Make a pattern in your baking dish. Fill the entire top layer until you cover the entire surface.  

Bake for 50 minutes or until the center is set. Let everything set for about five minutes before serving and enjoy! This recipe serves about 6-8 people.

Save Time With Rotisserie Chicken

Don’t have time to bake your chicken at home? No problem! Sometimes I grab a rotisserie chicken in the market and just shred it as part of my prep work. Be sure to get rid of the skin for this particular dish.

Variations

Consider adding one of the following flavor profiles to give this dish some new life:

  • Buffalo sauce
  • diced broccoli
  • 1 can of cream of chicken soup
  • 1 can of cream of mushroom soup
  • a dollop of sour cream on top when serving
  • cooked bacon
  • mixed vegetables
  • green onions
  • ranch dressing or ranch mix – add a bit of kick
  • If you don’t like cheddar cheese, consider Monterey Jack

Tips To Help Make This Cheesy Chicken Tater Tot Casserole

You do not need to cover your cooking dish with foil. The tater tots need to brown and the layer of foil will prevent that from happening. Just bake as is. 

Also, it’s important that you pre-cook the chicken. This is not a dish to prepare with raw chicken. So, either work with a rotisserie chicken or take some time to brown chicken ahead of time. Here’s a bonus tip – it’s also a GREAT idea for LEFTOVERS! If you have some meat from the night before that you want to breathe new life into, this is the perfect way to reintroduce it to the family. For example, if you make skinless chicken thighs last night, pull the meat off the bones today and serve with the tater tots! Boom! It will cut your prep time down in half. 

If you want to freeze your casserole, you can absolutely do so, just make sure that you wrap it up in foil or in an airtight container to prevent freezer burn. When you are ready to reheat after freezing, thaw completely first. Then cover with aluminum foil and bake for 35 minutes at 350 degrees. 

This dish can also work with ground beef, ground chicken, or ground turkey. Please sub as you see fit. 

You do not need to thaw the tater tots ahead of time. You can use them frozen, which is one less thing to worry about.
