This easy taco casserole recipe is life-changing and now I am going to pass it down to you. I’m dramatic – go with it. Look. We are taco people and sometimes I like to change things up. I read on Facebook last week that there is such a thing as a taco diet and I just about hit the fall and collapsed with joy. A taco diet? That’s not real.
Either way, I am going to live my life filled with Mexican cheese and soft queso because that’s what joy tastes like. If you want to make Taco Tuesday special, consider this easy taco casserole recipe.
It has all the flavors that you want in a meal like this and is super easy to serve.

Easy Taco Casserole Recipe – Perfect For Taco Tuesday
I always use extra lean ground beef because then I really don’t have to drain the grease. If you are using something with more fat, you’ll definitely need to do some draining.
Also, keep in mind, you can swap for ground turkey or chicken as well.
On most nights, that’s exactly what we do. 9 times out of 10, we eat chicken for dinner. Yes, that sounds boring. Yes, my husband literally hates me. But this is who I am as a person.
If you are looking for some heat, you can add it in with the salsa that you choose. I usually choose mild because of the kids, but consider spicing things up (literally) by going for a medium or a hot.
You can also choose to stir in a little cayenne pepper. That will definitely get the blood pumping. I’d start with 1/4 teaspoon and then taste it. Don’t go crazy with this because you can never really take back the heat once you add it.

Taco Casserole Recipe Ingredients:
- 1 teaspoon minced garlic
- 1 small onion, diced
- 1/2 green pepper, diced
- 1lb ground beef
- 1 teaspoon ground cumin
- salt and pepper
- 1 can, 10 oz, diced tomatoes with green chilies
- 3/4 cup salsa
- 1 cups shredded cheese
- 1 bag tortilla chips
Consider Toppings Such As:
- Sour Cream
- Shredded Lettuce
- Chopped Tomatoes
- Chopped Avocado
- Chopped Fresh Cilantro
- Sliced Black Olives
- Diced Jalapeno Peppers
Taco Casserole Recipe Directions:
Preheat oven to 350 and grease a 9×13 pan. Add garlic, onion, pepper and beef to a skillet. Brown meat and cook until onions are soft. Stir in cumin and salt and pepper.
Add tomatoes and salsa and heat on medium and boil for 10 minutes, stirring occasionally, until liquid is reduced by about half.
Layer half of the meat mixture into the bottom of prepared pan. This easy taco casserole recipe is literally almost DONE.
Top with crushed tortilla chips and half of the cheese. Repeat layer. Bake for 8-12 minutes or until hot.
Remove from oven and top with shredded lettuce, tomatoes, avocado, sour cream, and chopped fresh cilantro before serving. YUM and YUM. Serves 8-12

What Side Dishes Should I Serve With This Main Dish?
To be honest with you, I don’t think this really needs anything? It is FILLED with all types of goodness and has everything in the pyramid that you can think of.
You could serve a side salad if you’d like, but if we are being serious, the taco casserole is sort of topped with a salad, right? But – that’s up to you.
I guess if you REALLY wanted to serve something extra, you could start off with a soup. I would suggest an appetizer over a side dish if I HAD to place anything on the table. When I make dishes like this – or my Cheesy Potato Casserole – I usually just serve it as is.
Can I Use Turkey Or Chicken Instead Of Red Meat?
Absolutely! I am all about substituting out ingredients to make a dish work for my family. Read this recipe and use what you want out of it. If your children hate tomatoes, then leave those out! If they love chili peppers, add those in. You do you!
Heck, you could even use Doritos as the crunch if you’d like. Who am I to judge?
