This easy taco casserole recipe is a cheesy mixture of tortilla chips, ground beef, avocado, and green peppers. A simple go-to recipe for busy nights that is both filling and hearty and good for the soul.

This recipe is life-changing and has a great presentation as well. As much as we love tacos, sometimes it’s nice to change things up. This is a great alternative for taco Tuesday.

Easy Taco Casserole Recipe

As a note – I like to use extra-lean ground beef to avoid having to drain excess grease while cooking. If you prefer the higher fat alternative, carve out some extra time to drain as needed. Also, keep in mind, you can swap for ground turkey or chicken as well.

If you are looking for some heat, you can add some in with salsa or cayenne peppers. I’d start with 1/4 teaspoon and then taste it. Don’t go crazy with this because you can never really take back the heat once you add it in

Taco Casserole Recipe Ingredients:

  • 1 teaspoon minced garlic
  • 1 small onion, diced
  • 1/2 green pepper, diced
  • 1lb ground beef
  • 1 teaspoon ground cumin
  • salt and pepper
  • 1 can, 10 oz, diced tomatoes with green chilies
  • 3/4 cup salsa
  • 1 cups shredded cheese
  • 1 bag tortilla chips

Consider Toppings Such As:

  • Sour Cream
  • Shredded Lettuce
  • Chopped Tomatoes
  • Chopped Avocado
  • Chopped Fresh Cilantro
  • Sliced Black Olives
  • Diced Jalapeno Peppers

Easy Taco Casserole Recipe

Taco Casserole Recipe Directions:

Preheat oven to 350 and grease a 9×13 pan. Add garlic, onion, pepper and beef to a skillet. Brown meat and cook until onions are soft. Stir in cumin and salt and pepper.

Add tomatoes and salsa and heat on medium and boil for 10 minutes, stirring occasionally, until liquid is reduced by about half.

Layer half of the meat mixture into the bottom of prepared pan. This easy taco casserole recipe is literally almost DONE.

Top with crushed tortilla chips and half of the cheese. Repeat layer. Bake for 8-12 minutes or until hot.

Can I Use Turkey Or Chicken Instead Of Red Meat?

Absolutely! I am all about substituting out ingredients to make a dish work for my family. Read this recipe and use what you want out of it. If your children hate tomatoes, then leave those out! If they love chili peppers, add those in. You do you! 

Heck, you could even use Doritos as the crunch if you’d like. Who am I to judge?
