While traditionally a breakfast side, our confession is that we love turning it into a full-blown dinner by adding extra protein like sausage crumbles and bacon. This versatile dish is hard to resist, prompting a warning: make two pans if you’re having guests—there are never any leftovers with our family of five.

As with any recipe I offer on Lady and the Blog, you can omit specific ingredients if you don’t like them. For example, if you aren’t a huge fan of tomatoes – do you, boo.  You don’t NEED the tomatoes. Ok, let’s get right down to the ingredients list.

Ingredients

  • 10.5 ounce can of Campbell’s Condensed Cream of Celery Soup
  • 1 cup of milk
  • 3 garlic cloves diced
  • 1/2 cup tomatoes
  • 2 cups of cheddar blend cheese
  • 1 cup onion chopped
  • 32 ounces of frozen hash brown potatoes
  • 1/2 cup of bacon crumbles
  • salt and pepper to taste

How To Make Cheese Potato Casserole Recipe

Preheat your oven to 400 degrees. Mix ingredients together in a large bowl and combine. If hashbrowns are solid and giving you trouble, use a fork to try to separate. Ensure all ingredients mix thoroughly and then place aside.

Grease a 9×13 inch baking dish and spread out your mixture evenly. Plae your dish into your heated oven and bake for approximately 40 minutes uncovered. Serve immediately.

Can I Reheat This Cheesy Potato Recipe?

Absolutely – I don’t think you will have any leftovers to reheat, but casseroles taste great the next day. Feel free to microwave or warm up your leftovers in the oven as needed.
