This crockpot chicken and rice recipe is such an easy solution for busy nights. With just a few simple ingredients, you can enjoy a home-cooked meal with the family that you grew up enjoying.

Crockpot Chicken And Rice Recipe

I’m someone that typically uses a rice cooker when making the side dish for my family, but with this slow cooker meal, everything is cooked in one pot. Talk about an easy clean-up! The older I get, the more I tend to look for recipes that require less fuss in the kitchen and this one is a staple that I turn to over and over again.

Is it sexy? Absolutely not. It’s just a normal dish that you would serve on a typical family night. Sometimes I can’t always muster up the energy to produce a Pinterest fantabulous presentation… and that’s ok. Mom doesn’t always need to be on the front stage performing. Sometimes she just wants to sit down and relax after a long day of work, too.

Ingredients:

  • 2-3 chicken breasts
  • 1 cup chicken broth
  • 1/2 cup sliced carrots
  • 1/2 cup chopped celery
  • 1/4 cup diced onion
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2/3 cup rice, uncooked


A note about the rice: In this recipe, we used Uncle Ben’s Rice, which cooks in about 10 minutes. If you use a different type of rice, you’ll need to adjust your cooking time and possibly add more broth. Be sure to add the additional broth in the beginning to give flavors a chance to mingle while cooking

How To Make Slow Cooker Chicken And Rice

Spray slow cooker with nonstick cooking spray. Add carrots, celery, onion, and broth and mix well. Place chicken on top and sprinkle with seasoning. Cover and heat on low for 6 hours.

Remove chicken and stir in rice. Return chicken to the top and cover. Let cook for 15 minutes on high or until rice is tender. This dish serves 2-4.

This healthy slow cooker meal isn’t a visual showstopper, but it has all the right flavors mixed that your family will absolutely enjoy. Sometimes, we just want a simple recipe to enjoy and to make! Rich in fiber and protein, this is one meal that will satisfy your entire crew.

And don’t worry! If you want to freeze your leftovers, you won’t have any issues with reheating.

  • If you want to dice your chicken up before serving, it gives the meal an entirely new presentation.
  • As mentioned above, if you use traditional rice, you might need to add some more broth and cooking time to your slow cooker. This recipe revolves around boxed versions.
  • Looking to make the dish healthier? Consider switching to brown rice.
  • Add more spices that you personally enjoy. Want to throw in some teriyaki sauce or Dijon mustard? Go ahead!
  • If you don’t have a lot of time, slice up the chicken and cook it that way. You can save hours with smaller pieces.
