On a special occasion, I would even argue that your family could indulge on these bars as a breakfast option as well. With a side of fruit, of course! LOL! Have a party coming up? Then considering making a pan and bringing these Pumpkin Spice Bars along as the perfect hostess gift.

The texture of these Pumpkin Spice Bars are firm – not gooey. They are dense and easy to eat with your fingers which makes them great options to take along with you on the road.

Think of these bars as a cross between a cookie and brownie. A crownie? I’m just making things up now.

And if I had to put the two on a scale, I would say…  maybe a little more cookie than brownie because they certainly don’t have the fudgy chocolate consistency that you’d expect from a brownie.

Either way, they are delicious and easy to make. Easy to eat, too. 🙂

Pumpkin Spice Bars Recipe

You don’t need many ingredients to get started with this recipe. Most of which I am sure you already have. Odds are you will just need to run to the store to pick up a spice cake mix and some pumpkin pie spice. Everything else is pretty standard.

Ingredients:

  • 1 box, 15.25 oz spice cake mix
  • 1/3 cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1/2 cup melted butter
  • 1/2 cup pumpkin puree
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/4 cup prepared vanilla frosting

Preheat oven to 350 and spray a 9×13 pan with nonstick cooking spray. Set aside.

In a mixing bowl, add cake mix, brown sugar, and pumpkin pie spice. Mix well. Stir in butter, pumpkin puree, eggs and vanilla and mix well. Dough will be stiff.

Spread batter into prepared pan. Bake for 24-28 minutes or until toothpick inserted in the center comes out clean.

When cool, microwave frosting for 10 seconds and stir until smooth. Drizzle bars with frosting before cutting into squares.
