Pumpkin Bread Made With Cake Mix
As a side note, if you can’t find spice cake mix, you can always start out with yellow cake mix and then sprinkle some pumpkin pie spice into your batter. It will give you the same kind of vibe. It’s all about getting the flavors of pumpkin pie filling in a slice of pumpkin bread.

List Of Ingredients:
- 1 box, 13.25 oz, spice cake mix
- 1 can, 15 oz, pumpkin purée (not pumpkin pie mix)
- 1/4 cup vegetable oil
- 2 eggs
- 1/2 cup powdered sugar
- 1-2 teaspoons water
Directions:
Preheat oven to 350 and grease a loaf pan. Set aside.

In a large mixing bowl, combine cake mix, pumpkin puree, vegetable oil, and eggs. Mix well by hand until combined. Pour into prepared pan and bake for 50-60 minutes in a preheated oven or until a toothpick inserted in the center comes out clean. Cool completely on cooling rack.

Remove cooled bread from the pan. Mix powdered sugar and water until smooth. The mixture can be a tad thick, it just needs to drizzle off of a spoon. Drizzle glaze on top of the bread and let stand to harden. Once hard, slice and serve.

Tips and Variations
- Out of all the box cake mix brands out there, I usually turn to Betty Crocker. However, when you are in the grocery store, choose your favorite.
- As noted, there are different cake mix flavors available depending on what season we are in. If you are finding it difficult to find a 1 box spice cake mix, just use a plainer version (like yellow or white cake mix) and add pumpkin spice flavors as you go.
- To store leftovers, be sure to use an airtight container or wrap pieces in plastic wrap.
- Consider adding a cup of semi-sweet chocolate chips or chopped walnuts for a twist.
- If you don’t want to make the glaze, you could always top with a cream cheese frosting.
- Makes for a great afternoon snack or a breakfast treat.
- Heat the next morning in your toaster oven on a piece of aluminum foil.
