This dessert is layered with flavor – no literally. Instant pudding mix, graham crackers, whipped cream and then we top everything off with some chocolate frosting and a sprinkle of coconut to give a slight nod to the Girl Scouts! Love the combination.

Ingredients For No Bake Eclair Cake
You Will Need:
- 2 packages of White Chocolate instant pudding mix
- 3 cups of milk
- 1 12oz tub of whipped cream
- 1 box of graham crackers
- 1 cup of Caramel topping
- 1 cup of shredded coconut
For the Chocolate Icing:
- 3 tbs of baking cocoa
- 3 tbs of butter
- 3 tbs of milk
- 1 cup of powdered sugar

How To Make No Bake Eclair Cake
In a blender mix together pudding packets and milk. Mix until pudding becomes thick. Fold in the Cool Whip. until well mixed.
In a coat a 9×12 baking pan with pam cooking spray. Place full graham crackers in a layer on the bottom. Top with 1/2 of the pudding mixture.
Place another layer of graham crackers on top of the pudding. Pour the remainder of the pudding mix over the top and top with more graham crackers.
In a separate bowl melt milk and butter together. Mix in powdered sugar and cocoa until smooth.
Spread the chocolate icing on top of your last layer of graham crackers. Drizzle with Carmel Sauce. Coat with coconut. Cover and place in the fridge overnight.
Can I Switch The Flavors Around?
