Nothing beats a dish like this during a chilly night! We eat beef stew a few times a month. If I’m being honest with you, we typically use my mother-in-law’s beef stew recipe because it is the best one in town. However, I thought to mix it up a bit for the blog today and showcase an Instapot recipe instead because this beef stew cooks in a fraction of the time.

Starting off with tender chunks of beef, this great recipe will forever change the way you look at amazing beef stews! The total time you need to complete this recipe is about 50 minutes. Pressure cooking at its best. Let’s get started with this homemade beef stew.

Ingredients for Instant Pot Beef Stew

  • 2 pounds beef stew meat cubed
  • 2 tsp sea salt
  • 1 tsp ground black pepper
  • 1 tsp onion powder
  • 3 tsp Italian seasoning
  • 1/3 C flour
  • 3 tbsp olive oil
  • 1 medium yellow onion, cut into chunks
  • 2 tbsp minced garlic
  • 6 tbsp tomato paste
  • 2 tbsp balsamic vinaigrette
  • 3-4 Idaho potatoes, peeled and chopped into 1-inch chunks
  • 2 cups of small baby carrots cut in half
  • 2 tsp Worcestershire sauce
  • 3 bay leafs
  • 5 C of beef broth
  • 1 C water
  • Fresh parsley for garnish

How To Make Instant Pot Beef Stew

The first step to this delicious beef stew is to chop all your vegetables and meat, then set aside. In a large ziplock bag, combine the flour, salt, black pepper, onion powder, 1 tsp Italian seasoning, and meat. Shake to combine.

Set the Instant Pot to SAUTE mode. Add olive oil and meat. Brown on all sides. Remove meat from the Instant Pot and add onions, and garlic and saute for 1-2 minutes.

Mix in the vinaigrette and tomato paste until hot enough to deglaze the pot. Add beef into the Instant Pot with the potatoes, carrots, Worcestershire sauce, 2 tsp Italian seasoning, bay leaf, and beef broth. Stir to combine with a wooden spoon.

Add in enough water to cover the vegetables. Cover the lid and set the vent to sealing. Set Instant Pot manually to high pressure for a cooking time of 20 minutes. Once the time is up, allow Instant Pot for a natural release for 15 minutes. Release pressure entirely. Give it a good stir and serve the tender beef, topped with fresh chopped parsley. Enjoy!

Tips and Variations

  • You can add 1/4 of red wine to this dish to add some additional flavor.
  • Serve with a side salad and a fresh loaf of crusty bread.
  • Other options to add to your instant pot: balsamic vinegar, brown sugar, pearl onions, sweet potatoes, bay leaves
  • The next day this dish will taste even better. When storing, make sure you use an airtight container. If you need to add some tomato sauce to spruce up the liquid, feel free.
