Nowadays, everyone is looking for healthy crockpot recipes. Slow cooker chicken recipes are my absolute favorite ones to make because as soon as the kids go to school, I put all the ingredients in my crock pot and walk away! 

A chicken stew is something you can truly make all year round and this chicken stew recipe is rich and creamy and will satisfy everyone in your troop! Promise! 

This healthy crockpot chicken recipe is filled with a variety of fresh vegetables that I happened to have on hand. If you don’t have any cauliflower, don’t worry about it! The dish won’t suffer if you omit it. It’s all about using this concept as a base and then working off what you have at home. 

To be honest with you, I had a bag of frozen spinach that I was going to throw in at the tail end, but I thought it might be too many bullet points for you to look at and so I decided against it.

An easy crockpot chicken breast recipe should be just that… easy!  BUT if you want to throw in some spinach because you have some on hand – DO IT!

Creamy Chicken Stew Crock Pot Ingredients:

  • 3 Perdue boneless chicken breasts (Disclaimer: I’m a paid Perdue Farms ambassador.) 
  • 2 cups of diced onions
  • 4 diced potatoes
  • 1 1/4 cup chopped carrots
  • 3 garlic cloves – diced
  • 2 stalks of celery – diced
  • 1 can of cream of chicken soup 
  • 1/2 cup of sour cream
  • 1 cup of whole milk 
  • 1 cup of chicken stock
  • 2 tablespoons of mixed herb seasoning
  • 1 cup of cauliflower
  • 1 tablespoon of butter
  • salt and pepper to taste
  • top with hopped parsley – optional

How To Make This Healthy Crockpot Chicken

Microwave the butter in a glass bowl for 30 seconds and then place in your crockpot. Add in your vegetables and toss. 

Next, season with salt and pepper and then add in your chicken layer. 

In a separate bowl, combine your milk, sour cream, and condensed cream of chicken soup. Mix until combined. If ingredients aren’t mixing well, you can microwave for a minute to warm everything up. 

Pour liquids into crockpot and toss. Add your chicken stock. Season with herbs. and toss one more time. 

Cover and cook on high for 4 or low for 6-8 hours. When finished, serve with a loaf of fresh bread. 

 

How Long To Cook Chicken In Crock Pot

It all depends on what setting you choose. When determining how long to cook chicken in a crock pot, decide if you have all day or not. If I know I have all day, I usually let it ride for 6-8 hours on LOW. Otherwise, if I am in a rush, I opt for the HIGH setting and only cook my meal for 4 hours. Either works to be perfectly honest with you.

Does The Chicken Have To Be Thawed?

NO! Here’s my big secret when making crock pot recipes. I throw the chicken breasts in the microwave for about a minute. Just long enough to get some of the CHILL out of them. Then, I take a sharp knife and I cube them – still frozen. 

Since I plan on cooking this meal for so long, I am not so worried about the meat being thawed out. These are meals I turn to when I am in a pinch!

When I know I have a crazy day ahead of me and I just need to get something going nice and early so I don’t have to think about it later. And guess WHAT? I don’t always have meat defrosted in the refrigerator.
