Chicken Pot Pie Tater Tot Casserole Recipe
Nothing beats the flavor-filled chopped chicken inside of the chicken pot pie mixture. There’s always something so memorable about that first bite. Grab everything off this traditional ingredient list, and let’s get started on this yummy casserole.

Ingredients:
- 4 tablespoons butter
- 1/2 cup diced yellow onion
- 1 tablespoon poultry seasoning
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground black pepper
- 1/4 cup all purpose flour
- 2 cups chicken broth
- 4 ounces cream cheese, cubed
- 3 cups cooked and shredded chicken
- 1 bag, 10 oz, frozen peas and carrots (keep frozen)
- 1 bag, 28 oz, tater tots
- 2 cup shredded cheddar cheese
- chopped fresh parsley, optional for serving

How To Make Tater Top Chicken Pot Pie Casserole:
Heat oven to 400.
In a large oven proof skillet, add butter, onion, and seasoning and heat over medium high heat until butter is melted and onions are translucent and tender – about 5 minutes.
Stir in flour, mixing and cooking for about 1 minute.
Whisk in chicken broth, until no longer lumpy. Bring to a boil and cook for 2 minutes, continuing to stir as the mixture begins to thicken. Remove from heat and stir in frozen vegetables and chicken.
Place tater tots in a single layer on top. Bake for 40-45 minutes or until the tots are crispy and the mixture is bubbly and hot. Top with cheese and return to oven for 2-3 minutes or until melted. Serve topped with chopped fresh parsley if desired. This dish serves 4-6 people.

Tips and Variation
- I like to get a pre-cooked rotisserie chicken whenever I make a multi-stepped casserole. It saves time in the kitchen, and the cost is pretty much the same. You could also use leftover chicken.
- Consider using chicken thighs for a juicier end result. Chicken breast tends to dry out when cooked for too long.
- Add garlic powder, onion powder, crispy bacon, or a tablespoon of sour cream to your classic chicken pot pie ingredient list.
- If you don’t have a 10″ ovenproof skillet, you can easily put this into a 9×13 baking dish.
- Store leftovers in an airtight container.
- Pro Tip: You can also make these using your muffin pan. Just place your chicken pot pie filling in between layers of mini tater tots. You will get to enjoy this homemade taste in a different way. A fun twist!
- I did not use the entire bag of tater tots. You will have leftovers.
