How To Make Tater Top Chicken Pot Pie Casserole:

Heat oven to 400.

In a large oven proof skillet, add butter, onion, and seasoning and heat over medium high heat until butter is melted and onions are translucent and tender – about 5 minutes.

Stir in flour, mixing and cooking for about 1 minute.

Whisk in chicken broth, until no longer lumpy. Bring to a boil and cook for 2 minutes, continuing to stir as the mixture begins to thicken. Remove from heat and stir in frozen vegetables and chicken.

Recipe Variations:

The Chicken Pot Pie Tater Tot Casserole recipe can be versatile, and you can customize it to suit your taste preferences. Here are some variations you can try:

  1. Buffalo Chicken Tater Tot Casserole: Toss shredded cooked chicken with buffalo sauce before layering it in the casserole. Add crumbled blue cheese on top for a spicy and tangy twist.
  2. Vegetarian Tater Tot Casserole: Omit the chicken and use a mix of your favorite vegetables. You can include mushrooms, bell peppers, zucchini, or spinach. Ensure the vegetables are cooked before assembling the casserole.
  3. Mexican-Inspired Tater Tot Casserole: Season the chicken with taco seasoning or fajita seasoning. Add a layer of black beans, corn, and diced tomatoes. Top with shredded Mexican cheese blend and serve with salsa and guacamole.
  4. Breakfast Tater Tot Casserole: Make a breakfast version by adding cooked and crumbled breakfast sausage or bacon to the casserole. Whisk together eggs and milk, pour over the layers, and bake until the eggs are set.
  5. Mushroom and Spinach Tater Tot Casserole: Sauté mushrooms and spinach in garlic and olive oil. Layer this mixture along with the chicken and cream soup for a flavorful vegetarian option.

Tips and Variation

  • I like to get a pre-cooked rotisserie chicken whenever I make a multi-stepped casserole. It saves time in the kitchen, and the cost is pretty much the same. You could also use leftover chicken.
  • Consider using chicken thighs for a juicier end result. Chicken breast tends to dry out when cooked for too long.
  • Add garlic powder, onion powder, crispy bacon, or a tablespoon of sour cream to your classic chicken pot pie ingredient list.
  • If you don’t have a 10″ ovenproof skillet, you can easily put this into a 9×13 baking dish.
  • Store leftovers in an airtight container.
  • Pro Tip: You can also make these using your muffin pan. Just place your chicken pot pie filling in between layers of mini tater tots. You will get to enjoy this homemade taste in a different way. A fun twist!
  • I did not use the entire bag of tater tots. You will have leftovers.
one pan dinner ideas

One of my favorite things about this perfect dinner idea for little kids is that it’s a one-dish recipe! What an easy way to serve everything you need in one pan. Tender chicken plus a few cups of mixed vegetables and topped with crispy tater tots? A meal that has classic pot pie flavor but made with frozen tater tots to mix things up! So fun.
