Ingredients:
- 1 brick, 8 oz, cream cheese, softened
- 2 ripe bananas, peeled
- 1 teaspoon vanilla
- 1 tablespoon powdered sugar
- 3 eggs, divided
- 1 box, 16.5 oz, banana cake mix
- 1/3 cup vegetable oil
- 1 cup vanilla wafer cookies, quartered
- 1/2 cup chopped walnuts
Directions:
Preheat oven to 350 and spray a 9×13 baking pan with nonstick cooking spray. Set aside.
In a medium mixing bowl, beat together cream cheese and banana until smooth using an electric mixer or hand mixer. Add vanilla, powdered sugar and 1 egg. Beat until smooth. Set aside.
In a separate large bowl, combine cake mix, remaining 2 eggs and vegetable oil. Mix well. The batter will be stiff. Drop dollops of batter into the prepared pan. Pour cream cheese mixture on top. Add vanilla cookies and chopped walnuts to the top.
Bake for 20-25 minutes or until edges are browned. The center may be a little soft but not jiggly. Cool completely to room temperature before refrigerating for an hour. Cut cold brownies into bars and serve.
Makes 24 brownie bars.
