Banana Speculoos Cupcake Recipe – Cookie Butter Cupcakes

This Speculoos cupcake recipe just might change your life. Cookie butter flavoring inside a moist and decadent batter that is easy to make and tastes so good it doesn’t even need any icing!

To be honest with you, I made these banana cookie butter cupcakes one morning really early – before 8AM. When they came out of the oven and I tested them, the cupcake itself was so sweet and rich that I just served them AS IS to the kids and decided NOT to put any icing on them.

The insides are filled with Trader Joe’s Speculoos Cookie Butter. If you haven’t tried this spread yet it is a cross between gingerbread and crushed biscuits. A more well-known item would be Biscoff.

I’m not sure if the Trader Joe’s Speculoos and Biscoff are exactly the same items, but if you have one and not the other, you can certainly swap them out for this recipe.

The flavor we are going for is cookie butter. We’re making a cookie butter cupcake and both these products will serve that profile.

But, I personally love Trader Joe’s and so I had the Speculoos on hand because I use it for snacking and amp up my desserts.

The absolute bonus of this easy cupcake dessert is the fact that you get a bit of a gooey center filled with a bit of Speculoos. Oh my!

Ingredients For Banana Speculoos Cupcakes

  • 8 tablespoons of butter – or 1 stick
  • 1/3 cup milk
  • 1 teaspoon of vanilla
  • 2 cups all-purpose flour
  • 2 eggs
  • 3 mashed bananas
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • A dab of Speculoos per cupcake

How To Make This Speculoos Cupcake Recipe

Preheat oven to 350 degrees.

Combine your ingredients into a large bowl and whisk together. Spray and line your muffin tin and then fill each muffin 2/3 full.

You will find that the Speculoos is not smooth. It is solid and whole – similar to peanut butter. It’s ok. Just drop it right in the center.

Bake the cupcakes for about 5 minutes and then open your oven. With a knife, gently swirl the cupcakes making sure the Speculoos is incorporated into the batter. Don’t worry about getting all the way to the bottom.

Just give it a light swirl. You could also absolutely skip this step and just leave the Speculoos to navigate its way down and around your cupcake batter naturally.

Your banana speculoos cupcake should cook for 15 minutes total or until the edges are golden. This is not including the time it takes you to swirl.

As mentioned, we ate this (for breakfast-oh my goodness I am that mom) and without any icing. I did that because this cupcake is VERY sweet. But if you’d like to put a little frosting on top, go right ahead!! That’s what makes the world go ’round.

Can I Just Add Speculoos To A Boxed Cupcake Batter?

If you don’t want to worry about making fresh cupcakes, but still want the speculoos cupcake WIN, don’t worry about having to make this recipe from scratch! Just use this idea with a cake mix box! We all don’t have time to whip out the flour and the baking powder every single day, right?

Think about what other spreads you’d like to try. Peanut Butter? Nutella? The choices are endless.
