The holidays mean many things for people, but one thing is certain. We end up seeing our family and friends a lot more these days. Am I right? I am absolutely not complaining either. I love to get together with my loved ones. It’s just that all that eating is weighing me down… literally. LOL! When I need to switch up gears and make dinner just a tad bit lighter, I turn to this hearty Winter Salad recipe. Believe me – it is really good! I’m not saying this is a weight loss option because it has bacon and rice in the mix. But it’s not the 50 pounds of turkey and sweet potatoes I’ve been choosing as of late and that is a WIN. Trust me!! I make bad decisions during the last 6 weeks of the year and whenever I can manage to get a few greens on my plate, I do! This hearty winter salad is a great compromise!

Hearty Winter Salad Recipe

We paired this hearty winter salad recipe with a creamy poppy seed dressing, but you really can use any dressing you’d prefer. In case you are wondering, the rice I use for this meal is Lundberg Wild Blend Rice. It takes about 35-45 minutes to cook – so plan to make it ahead if you know you are going to be short on time.


Also, my daughter doesn’t eat bacon – so if you have someone in your family that doesn’t eat meat, feel free to omit this ingredient.

Hearty Winter Salad Recipe Ingredients:

  • 10 oz fresh spinach or spring mix
  • 1 large can, 15 oz, mandarin oranges, drained
  • 1 large pomegranate
  • 1 cup cooked wild rice
  • 6 slices bacon, cooked and crumbled
  • 1/3 cup shredded parmesan cheese
  • creamy poppy seed dressing

Hearty Winter Salad Recipe Directions:

Slice the top off the pomegranate and then cut into quarters. Gently use your thumb to loosen seeds. Break open quartered piece as necessary to reveal and remove more seeds.
