  • 2 cups uncooked rice
  • 1 cup water
  • 1 cup vegetable stock
  • ½ can whole kernel corn
  • 1 can enchilada sauce
  • 3 tsp taco seasoning
  • 1 can black beans
  • ½ red bell pepper – diced
  • ½ green bell pepper – diced
  • ¼ cup chopped cilantro
  • ½ tsp salt
  • 1 cup shredded cheddar cheese
  • Crumbled cojita or queso fresca cheese for sprinkling
  • Taco shells

  1. Combine rice, water, and vegetable stock in a large crockpot. Cook on high 1 hour.Cockpot Taco and Rice
