One of our favorite go-to recipes to make at home is baked lamb chops in the oven. A quick and simple family favorite that you can turn to year-round which is also done in under 30 minutes.

Growing up, my grandmother loved to make baked lamb whenever company came over. Lamb was the big dish! Truth be told, the Maltese love rabbit AND lamb. An island that is surrounded by the sea… I think they considered these land animals a special treat.
Baked Lamb Chops In The Oven – Easy And Delicious

Of course, it all starts with a great piece of meat and I always head to the butcher for that! We picked up 1.3 pounds of lamb for a family of five knowing that one of my children is a vegetarian. So, really I was thinking 2 adults and 1 grown child and one 7 year old.
Roasting lamb is as easy as roasting a chicken.
Ingredients For Baked Lamb
- 1.3 pounds of lamb
- 1 tablespoon of olive oil
- 4 tablespoons of Penzy’s Revolution
- Salt and Pepper to taste
The spice rub that we use is actually from Penzey’s Spices and is available on Amazon to purchase. I have a sweet little spice shop around the corner from my house that I love to visit and picked it up there, but luckily the exact mix is available online as well.

Formerly known as Bicentennial and now rebranded as Revolution, this spice mix has everything you need for turkey, duck, goose and pork roast. But guess what? We use it on our lamb and it works!
If you don’t have any lamb chop marinade spice rubs on hand and you want to use something from your fridge, consider mixing fresh parsley, minced garlic and some olive oil together. That will do!
The point is that you want to give the meat enough flavor as it bakes. So, don’t worry if you don’t have this exact rub – substitute it out and made your own lamb marinade.

How To Make Lamb Chops In The Oven

Preheat your oven 350 degrees. Separate lamb chops on a baking sheet and give them enough room to spread out.
In a small bowl, combine oil and spice mix of your choice and mix. Lightly brush over the meat of each lamb chop and cover each side. If you don’t want to use the oil and just sprinkle the spice right onto the meat, go ahead and do that instead. You really don’t need to use any oil to make lamb in the oven.
Cook this dish for 15 minutes if you are looking for medium – uncovered. This will still give you a little bit of pink inside your lamb chops. If you don’t like pink, leave it in for a few more minutes.
Before serving, let the baked lamb chops sit for 3-5 minutes to rest. Enjoy!

Do I Have To Marinade The Lamb Ahead Of Time?
With meat, it’s always a great idea to marinade if you have the time. But when I am cooking at home for my family, if I forget this step… then I MOVE ON.
So, here’s my official answer: if you remember to do it, then do it! It will provide more flavor and zest to your meat! If you don’t remember to do it, then don’t feel bad about it and serve this lamb chops in the oven recipe with a big smile on your face. No one will really notice.

How Do You Know When Lamb Is Done?
You can use a digital instant-read meat thermometer if you have one on hand to read the internal temperature of your lamb chops. Internal lamb chop temperatures should read as follows: rare at 120°F, medium rare at 125°F, medium at 130°F, and well done at 145°F and higher.
As a note, lamb has the tendency to start to taste a bit gamey once you cook it past medium.
