If you follow me on Instagram, I usually chronicle my meal choices and not all of them are successes. Hey! I’m just being honest. Parents should stick together and so I wanted to write this post to give you a few tips that might help you this back to school season and beyond.
Easy Dinner Ideas That Will Save You Time And Money
I have a few of these articles in mind, but I wanted to start with dinner because we find this meal always seems to creep up on us! Before we know it, it’s 5PM, our children are all home from their after-school activities and STARVING. I know this sounds familiar. I don’t even have to ask you!!

It just doesn’t get easier than this. Once a week, I turn to my pantry and create an antipasto night for the family. No oven required! It takes a few minutes to put together and everyone LOVES the meal. Full confession – antipasto is literally my favorite part of any meal. Whenever we go to a party, I always run for the artichokes and salami. What can I say? I’m half Italian!
If you want to create an antipasto night of your own consider adding the following items to your grocery list:
- Salami / Pepperoni
- Olives – variety
- Roasted peppers
- Mozzarella (Fresh if you can get it)
- Other favorite cheese
- Red /Orange / Yellow Bell peppers
- (whatever you LIKE)
Mix and match. Enjoy what you want and then save the rest for tomorrow. Clean up is a breeze and everyone leaves the table satisfied. Nothing is fried and everyone is happy – including you.
Slow Cooker / Crock Pot Recipes
When I know that my family is going to have a particularly stressful day, I prep dinner WAY ahead of time. We are talking in the AM – before breakfast!! Set A Weekly Menu
Organization gives me LIFE. I need to sit down and figure out WHAT I am making and when! In fact, it’s best that everybody talks about what we want TOGETHER as a team. I find the kids eat more of our food if they feel invested in the decision-making process. So, we come together as a group and decide what night we want tacos and what night we want pancakes! Once you place your easy dinner ideas all on one list, you can then figure out your action plan.
Your Kids Can Help You Make Dinner
My daughter is 13 and she wants to be a baker when she grows up. In fact, her favorite thing to do is to dirty my kitchen. 🙂 Ahhh – I’m just teasing. Sort of. Don’t stop your kids from helping you in the kitchen. In fact, start them out as soon as you can. They can wash vegetables, mix salads, set the table, and more! It’s all up to you and how much control you are willing to let go.
Yeah – I said it. We are control freaks. Let it go. Children should do so much more but we don’t allow it because they don’t do it “right”. Well, that is not the best attitude. So WHAT the string beans won’t be perfectly chopped! Or the salad will be a little soggy… they will eventually learn. We all do.
Here are a few easy dinner ideas that your children can handle:
- Grilled cheese and tomato soup (from the can)
- Chicken noodle soup
- Macaroni and cheese
- Grilled chicken and rice (do you have a rice cooker? YOU NEED A RICE COOKER)
- Roasted potatoes and hot dogs
It doesn’t have to be terribly gourmet, but it does have to be easy to make. And if you have another kid, have them do the dishes. That’s what we do in our house. It works wonderfully!
