I had some friends over Friday night and boy did I need it! It’s been so long since I just relaxed and chilled with my girls. Ages even. Work has been amazing – but something has to give, right? And what’s been suffering has been my social life. This Friday, everything changed. I sent a request out to 6 of my girlfriends and everyone said yes. It’s was super low key and that’s exactly what I wanted.

I didn’t go crazy with food. No dinner planned. Instead, I just put out a little appetizer spread for them to enjoy. I have my typical go-to favorites. Of course, there’s always a vegetable and cheese platter. And you have to have a few dips on board with some crunchy chips and pretzels, right?

I also love to serve hot plates as well. It’s nice to have two waves. The cold is for when people are walking in the door and then the hot is for when everyone has arrived. For this gathering, I served two varieties of Dr. Oetker Ristorante Pizza – Mozzarella and Spinaci.

Thin crust and yummy goodness with hardly any effort on my part. You KNOW I’m all about that!  12-14 minutes in the oven and you are GOOD to GO. There’s no pre-planning or maintenance needed which means that I got to spend the majority of my night chatting with my girlfriends. Exactly where I wanted to be!
