spinach and artichoke pasta

I came up with this recipe because I bought a humongous bag of peas and I needed to get through it. So, originally I thought of just making peas, bacon, and pasta, but then I noticed that I had a container of spinach and artichoke dip from BJs Wholesale Club and an idea occurred! How simple would it be to just mix everything together with some mozzarella cheese? Let’s go!

Ingredients

  • Peas: frozen works great, and (surprise!) peas are a great source of Vitamin C!
  • Onion: standard yellow is fine.
  • Garlic cloves: fresh is always best, butI love to buy frozen! You can find them diced in most grocery stores.
  • Olive oil: EVOO = a staple in any pasta recipe
  • Bacon: cook to your liking; I prefer mine extra crispy.
  • Pasta: I used rotini, but feel free to pick your favorite.
  • Shredded mozzarella cheese: adds that yummy stringiness to the dish
  • Parmesan cheese: a nice finishing touch
  • Salt and pepper: season as needed
  • Spinach and artichoke dip: the main flavor profile of the dish. I got mine at BJ’s, but most grocery stores will have some version that will work.

How To Make Spinach and Artichoke Pasta

Preheat over 450 degrees. Line baking sheet with slices of bacon and cook for 18 minutes or until cooked to your liking. I tend to like it extra crispy. This might not be your preference.

Cook your pasta according to the package and set it aside. In another pan, sautee garlic, onions, and a few tablespoons of olive oil until onions are translucent. Add in your peas, salt, and pepper, and cook through.

Meanwhile, microwave your spinach and artichoke dip according to the package.

When the bacon is finished, take it out and pat it dry. Then cut it up into tiny pieces. Remove any ends that are over burnt.
