This Loaded Baked Potato Salad recipe is a great dish to bring to a BBQ or to MAKE for when you have guests coming over for a party. It uses cheddar cheese and bacon and mayonnaise. So, listen. I’m not saying this a low-fat option.

If you are a weekly reader of Lady and the Blog, you know that I love bacon. So, any time I can throw bacon in a recipe, I DO. This recipe makes complete sense though, right?

When you get a loaded baked potato at a restaurant, it comes with bacon and green onions – so why wouldn’t I add that to this salad? But here’s the thing. My daughter is a vegetarian and if I want her to eat this, then I can’t put bacon in the mix.

So, sometimes I omit the bacon if the company I keep isn’t into eating meat. Don’t feel like you have to add the bacon if it isn’t your cup of tea. 🙂

Loaded Baked Potato Salad Recipe Ingredients

  • 2 lbs. Yukon Gold Potatoes (Any potato you have on hand will work fine)
  • 1 cup Plain Greek Yogurt
  • ½ cup Mayonnaise
  • ¼ cup Green Onion, chopped
  • 1 cup Shredded Cheddar Cheese
  • ½ Red Onion, chopped
  • ½ lbs. Bacon, cooked crispy chopped
  • Salt
  • Black Pepper

How To Make Loaded Baked Potato Salad 

Cut the Potatoes into ½ inch cubes, boil until tender, 8-10 minutes. Drain and rinse with cool water to stop the cooking process.

In a large bowl combine Greek Yogurt, Mayonnaise, Red Onion, ½ of the Shredded Cheese and ½ of the bacon. Mix well Add the Potatoes to the mixture and stir until the Potatoes are evenly coated. Add Salt and Pepper to taste.

Sprinkle the Green Onion and remaining Cheese and Bacon on top of the potato salad. Refrigerate until ready to serve.
