There’s something so light and delicious and PERFECT about a fresh Israeli Salad recipe, right? We pretty much eat this all year long. Not only during the summer – even though the dill really does give it that warm-weather vibe.

Israeli Salad Recipe
Ingredients:
- 1 tomato diced
- 1 cucumber peeled and diced
- 1/4 of an onion diced – less if you don’t feel like having an onion taste
- 1 bell pepper diced (orange or yellow for color)
- 3 tablespoons of both dill and parsley chopped
- Juice of 1 lemon
- Olive oil to drizzle over top (less than 1/4 cup if you are a measuring kinda gal)
- Salt and pepper to taste
Directions
Mix and serve. Don’t overdo it with the olive oil. A little goes a long way. Drizzle a bit and then toss. See how you feel with a quick bite. If you are happy, then serve.
