In fact, I start off with frozen in order to keep the prep time limited and ensure that this easy meal is something I turn to over and over again. If you’d like, you could substitute for turkey meatballs as a healthier alternative, but that is up to you.

Either way, this quick dinner option will become one of your all-time favorites to make guaranteed. Just serve alongside a bed of rice and you will have yourself one tasty meal as a main course any day of the week!

Ingredients

  • 1 onion, diced
  • 1 red pepper, chopped
  • 1 can, 20 oz, pineapple chunks
  • 1/2 cup brown sugar
  • 1/2 cup ketchup or tomato paste
  • 1/4 cup water
  • 2 tablespoon soy sauce
  • 1 package, 32 oz, frozen meatballs (keep frozen)
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water

Cooking Instructions for Instant Pot Meatballs: 

Add onion, red pepper, pineapple, brown sugar, ketchup, water, and soy sauce to a slow cooker and mix well. Stir in meatballs.

Place the lid on the instant pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 5 minutes.

When the cooking cycle is complete, quick-release pressure and open the pot. Carefully stir the meatballs. Set the pot to saute and add the cornstarch slurry and mix until the liquid is thick. Serve immediately to your whole family.
