I’m so excited! A reader sent in her recipe for Cottage Cheese ‘Rose’ Cookies. Here’s what Alana says to do:
- 1 1/3 cups of cottage cheese (this has to be the dry type, granulated, you can’t have liquid in it, i normally make mine myself, but you can also buy it from polish food shops)
- 1 3/4 cups of flour
- I cup and 3 tablespoons of margarine (i use butter)
- pinch of salt
- 1 egg white
- 1 cup of sugar

Step 1: You grate the margarine/butter , add flour, cottage cheese, salt. Mix it all well with you hands and make sure the dough is the same color throughout.
Shape it in the ball and put it to fridge for at least 30 mins.
Step 2: Now you need to mix the egg white with sugar. Egg whites will likely take more air in when it’s been out of the fridge at least half an hour before you start. Mix until firm and able to hold shape. Next add the sugar a little at a time. Do not just throw everything in.
Step 3: Preheat the oven to390 degrees
Take the dough after its settled in the fridge. You know it’s ready when it no longer sticks to your hand. Place some flour on the roller to ensure it glides properly. Separate it into 2-3 smaller balls and roll it out thinly.
Step 4: Thinly spread the beaten egg white and sugar over the rolled out dough leaving the sides uncovered. Roll the dough up into a log. Take your time with this step and ensure the dough isn’t sliding – but rolling onto itself.
Step 5: Take a knife and cut your pieces. (See above for measurement estimation). Place baking paper on your tray. Spread them out on paper and make sure they are separated on baking tray.
If you want the perfect rose bud shape then lay them cut side down(doesn’t matter if it’s top or a bottom really). You can see that I put some of mine on the side, I like the messy look:-). If you want to try to bake a few on their side be sure to pinch one of the ends to form the rose bud shape.
Step 6: Bake the cookies for 20 minutes or until the dough is slightly golden. Do not over bake. Enjoy!
