Guinness Cheddar Dip Recipe

Guinness Cheese Dip is the perfect appetizer for St. Patrick’s Day or during the first quart of the year. It uses Irish beer as the main ingredient combined with various kinds of cheese to create a creamy dip that everyone will love.

Guinness Cheddar Dip Recipe

Guinness Cheddar Dip Ingredients: 

  • 1 tablespoon minced garlic
  • 1/2 cup half and half (or use whole milk)
  • 1/3 cup Guinness Beer
  • 1 brick, 8 oz, cream cheese, softened
  • 1/2 cup shredded white cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 1 cup shredded Gruyere cheese
  • 1 tablespoon dijon mustard
  • 2 small cans, 7.5 oz/10 biscuits each, refrigerated biscuits
  • 2 cups water
  • 2 tablespoons baking soda
  • 1 egg, beaten
  • 1 tablespoon water
  • coarse sea salt
  • chopped fresh green onions for serving

How to Make Guinness Stout Cheddar Dip

Preheat oven to 350.  Cut each biscuit in half and roll each half into a ball. Set aside.

In a saucepan, combine garlic, half and half and beer. Over medium heat, bring liquid just to a boil. Reduce heat to simmer and add in the cream cheese. Use a whisk to melt and smooth the cheese. Add in 1/4 cup white cheddar cheese, mozzarella, Gruyere cheese, and mustard. Whisk and continue to heat on low until completely melted.

Meanwhile, bring 2 cups of water and baking soda to a boil. Reduce to low heat and, working in batches, add biscuits, cooking for about 1 minute until puffy and double in size. Remove from water with a slotted spoon and place into a 10″ ovenproof skillet around the edges. Coat with a pinch of kosher salt. 

Place cheese into the center of the dough and top with remaining white cheddar cheese. Bake for 30-35 minutes or until the biscuits are golden brown. Top with chopped onions and serve hot.

Tips and Variations:

  • You can also serve this smooth creamy Irish cheese dip with pita chips, tortilla chips, or your own pretzel bites.
  • For added flavor, consider adding Worcestershire sauce, parmesan cheese, sharp cheddar cheese, garlic powder, caramelized onions, and onion powder or incorporating Dubliner cheese into the mix.
