Guinness Cheddar Dip Ingredients:
- 1 tablespoon minced garlic
- 1/2 cup half and half (or use whole milk)
- 1/3 cup Guinness Beer
- 1 brick, 8 oz, cream cheese, softened
- 1/2 cup shredded white cheddar cheese, divided
- 1/2 cup shredded mozzarella cheese
- 1 cup shredded Gruyere cheese
- 1 tablespoon dijon mustard
- 2 small cans, 7.5 oz/10 biscuits each, refrigerated biscuits
- 2 cups water
- 2 tablespoons baking soda
- 1 egg, beaten
- 1 tablespoon water
- coarse sea salt
- chopped fresh green onions for serving

How to Make Guinness Stout Cheddar Dip
Preheat oven to 350. Cut each biscuit in half and roll each half into a ball. Set aside.

In a saucepan, combine garlic, half and half and beer. Over medium heat, bring liquid just to a boil. Reduce heat to simmer and add in the cream cheese. Use a whisk to melt and smooth the cheese. Add in 1/4 cup white cheddar cheese, mozzarella, Gruyere cheese, and mustard. Whisk and continue to heat on low until completely melted.

Meanwhile, bring 2 cups of water and baking soda to a boil. Reduce to low heat and, working in batches, add biscuits, cooking for about 1 minute until puffy and double in size. Remove from water with a slotted spoon and place into a 10″ ovenproof skillet around the edges. Coat with a pinch of kosher salt.
Place cheese into the center of the dough and top with remaining white cheddar cheese. Bake for 30-35 minutes or until the biscuits are golden brown. Top with chopped onions and serve hot.
