- 2 tablespoons vegetable oil
- 1 lb chicken breast, raw and cut into cubes
- 2 tablespoons minced garlic
- 1 small onion, chopped
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- I1 box, 16 oz, rotini pasta or penne pasta
- 1 jar, 24 oz, marinara sauce
- 3 cups water
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- chopped fresh parsley or fresh basil, optional for serving

How To Make One Pot Chicken Pasta
In a large stockpot, add oil, chicken, garlic, and onion and cook over medium-high heat until chicken is cooked through. Add seasoning, salt, and pepper and mix well. Remove from pot and set onto a plate.
Add marinara sauce and water. Bring to a boil and add uncooked pasta. Continue to boil until pasta is cooked to your liking. Transfer chicken back in and 1/4 cup of mozzarella cheese and mix well.
On top of the dish, add the remaining cheese and cover. Let stand for 3-5 minutes or until cheese is melted. Sprinkle with parsley before serving.
