Easy One Pot Chicken Parmesan Pasta Recipe

Whenever I want to serve a delicious dinner but don’t feel like dealing with a massive clean-up, I always turn to this one pot chicken parmesan pasta recipe. It’s one of my all-time favorites and is an easy chicken recipe that anyone can make with a little bit of time on their hands.

One Pot Chicken Parmesan Pasta Recipe

One pot pasta dishes combine all your favorite ingredients into one. Tonight, we focused on Italian flavors – which is always a crowd pleaser in my house. Garlic cloves, fresh mozzarella, tender chicken, and of course, your favorite pasta. And the best part? Everything is done on your stovetop!

Ingredients: 

  • 2 tablespoons vegetable oil
  • 1 lb chicken breast, raw and cut into cubes
  • 2 tablespoons minced garlic
  • 1 small onion, chopped
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • I1 box, 16 oz, rotini pasta or penne pasta
  • 1 jar, 24 oz, marinara sauce
  • 3 cups water
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese
  • chopped fresh parsley or fresh basil, optional for serving

How To Make One Pot Chicken Pasta

In a large stockpot, add oil, chicken, garlic, and onion and cook over medium-high heat until chicken is cooked through. Add seasoning, salt, and pepper and mix well. Remove from pot and set onto a plate.

Add marinara sauce and water. Bring to a boil and add uncooked pasta. Continue to boil until pasta is cooked to your liking. Transfer chicken back in and 1/4 cup of mozzarella cheese and mix well. 

On top of the dish, add the remaining cheese and cover. Let stand for 3-5 minutes or until cheese is melted. Sprinkle with parsley before serving. 

Serves 6.

Tips and Variations

This one pot chicken pasta will become a household favorite of yours! There are fewer dishes in the sink and you still have delicious weeknight dinners to serve the family. The perfect pasta with the best chicken! Here are some final touches to consider if you are looking to change things up:

  • Serve with a side of garlic bread and green beans and then top with your favorite fresh cheese. Personally, we like Parmigiano Reggiano, but you could sprinkle mozzarella cheese if you’d like. You could even add dollops of ricotta to your bowls for an added layer of flavor.
  • If you want to add additional flavor to this dish, sprinkle additional onion powder or a teaspoon of garlic powder if you don’t have any more fresh ingredients on hand.
  • It never hurts to add a few extra cloves of garlic, cherry tomatoes, red pepper flakes, or a dash of red wine. The whole family will thank you!
  • Keep your pasta al dente. Don’t over cook it.
