    I’m always on the hunt for healthy pancake recipes and so I wanted to write a post focusing on how to make oatmeal pancakes. I think oatmeal pancakes offer up the same flavor profiles but without all the same ingredients your boxed varieties provide.  You need to do a few more steps when incorporating oatmeal to your breakfast batter, but I think it’s worth it.     My family usually asks for pancakes every Saturday. It’s sort of our tradition and I don’t mind it one bit. This breakfast reminds me of my childhood. We weren’t waffle kind of people. At times, we would dabble in a fresh bagel from the deli. But truth be told – when it was a special occasion – my mother always turned to the pancake and so I find myself doing the same. In an attempt to change this up, I like to look for ways to add a little variety and spice to the mold. Sometimes it’s with fruits – banana pancakes, apple and cinnamon blend, or raspberry or blueberry preserve. Other times, I head straight for the chocolate – nothing beats mixing Nutella or chocolate chips. Am I right? Come at me! 🙂 

    But then there are days where I just want to make our breakfast a tad bit healthier and that’s where the oatmeal comes into play.

    Healthy Pancake Recipes Ingredients:

    • 1 cup flour
    • 1 cup oatmeal
    • 2 tablespoons white sugar
    • 2 teaspoons baking powder
    • 1 teaspoon cinnamon
    • 1/4 teaspoon salt
    • 2 eggs
    • 1-1/2 cups milk
    • 2 teaspoons vanilla

    Oatmeal Pancakes Directions:

    First, we have to start with our dry ingredients. Add the flour, oatmeal, sugar, baking powder, cinnamon and salt to a food processor and process for 15 seconds.By using the food processor, you will break down the oatmeal which is something you need to do. Otherwise, your batter will be a bit chunky and nobody wants chunky batter. You will feel that in your pancake if you omit this step. A food processor really breaks down the oatmeal and helps with the texture.

    Then you want to add your eggs, milk and vanilla and process for an additional 20 seconds or until your batter is mixed well.

    At this point, you are ready to preheat your griddle or frying pan until it is hot and ready to go. Spray whatever you are using with a nonstick cooking spray. Pour 1/4 cup of batter onto the hot griddle and heat your healthy pancakes for 2-3 minutes before flipping and heating for an additional 2 minutes on the other side. Be sure to keep an eye on everything you are doing. We all know that pancakes can brown fairly quickly when we aren’t looking.

    A good indicator the pancakes are ready to flip is when the batter bubbles as shown.

    Stack them high. Serve with hot syrup. Enjoy. Enjoy. Enjoy. You cannot beat this breakfast.
