    Strawberry Bruschetta Baguettes – Strawberry Appetizers

    Strawberry Bruschetta Baguettes are the perfect appetizer – all year long. Yes, I said it. It’s not just a summer thing. Ok, I know that strawberries are seasonal and I understand that they are more flavorful during certain months. But I can’t help it! I just love making this recipe! And when you add goat cheese and a balsamic glaze to their sweetness, it just all works out. I promise! So, enjoy these Strawberry Bruschetta Baguettes today, tomorrow, or in July! Whenever your sweet little heart desires. Here’s how you make these strawberry appetizers.

    You need fresh ingredients – most of which I am sure you already have on hand. Odds are you will just have to run out for some goat cheese and a fresh baguette. By the way, my son loves to say the word “baguette” because he read Nanette’s Baguette and he feels so fancy.

    INGREDIENTS: 

    • 1 french baguette, sliced on a diagonal, ¾-inch thick 
    • 1 1/2 tbsp. minced garlic 
    • 2 cups fresh Roma tomatoes, chopped
    • ½ cup fresh basil, chopped
    • 1 cup strawberries, chopped, hull, and stem removed
    • salt and pepper to taste
    • 1 tbsp. olive oil
    • 1 tbsp. balsamic vinegar
    • 1/2 stick of butter- melted 
    • 8 oz herbed Goat cheese
    • chopped basil to garnish

    Directions For Strawberry Bruschetta

    In a medium mixing bowl, add chopped tomatoes, strawberries, minced garlic, olive oil, balsamic vinegar, and basil together. Breathe it all in and smell that fresh goodness. YUM!  Chop up the basil and then add it to the strawberry mixtures. Toss everything to combine. You should really set everything aside for one hour. That will ensure that the juices and flavors mingle. If you are short for time, no one will judge you. No, really. The world won’t implode. Do you.

    Add salt and pepper to taste.

    Pre-heat oven for 350′


    Place your baguettes on a cookie sheet and brush with melted butter. Bake them for 5 minutes, just until slightly browned. Be sure to watch them because if your oven is anything like mine… it is evil. I need a new oven in the WORST WAY. 


    Next, be sure to spread each piece of bread with some goat cheese. Then spoon the fresh bruschetta on top of the goat cheese. You are almost ready to enjoy, my friends. The last step is to garnish with fresh basil and serve. YAHOO!

    I feel like you can literally treat yourself to this recipe for lunch one day. Right? Or if you are having a few friends over for a book club, this would be the perfect appetizer intro. There’s something so very special about the way these small bites look and feel. They are dainty and sweet yet provide just the right amount of crunch to make it feel like you are having a good time and eating something hearty. I don’t like to feel like I am watching what I eat. But truth be told, I really do try to stay away from fried foods. Instead, I much rather indulge in strawberry appetizers like these. The goat cheese is rich and creamy and the herbs are packed with flavors that burst in your mouth (if the season is right).  Make sure you make enough for seconds (and thirds). 

    Want To Add A Little More Flare? 

    If you’d like, you could always drizzle on store-bought balsamic reduction right on top of the Strawberry Bruschetta right before serving to your guests. I wouldn’t do this too much ahead of time because it might make the bread soggy. Consider this your final prep step before handing them out to the crowd. You don’t NEED this because we already mix our strawberries with vinegar at the beginning of our process. However, sometimes, you might want a bit more sweet and sour flare. You know what I mean. I absolutely love balsamic reduction.

    4. Set to the side for 1 hour
    5. Add salt and pepper to taste.
    6. Pre-heat oven for 350'
    7. Place baguettes on a cookie sheet and brush with melted butter.
    8. Bake for 5 minutes, just until slightly browned.
    9. Spread with goat cheese on top of the baguettes.
    10. Spoon bruschetta on top of the goat cheese.
    11. Garnish with fresh basil and serve.
    12. ENJOY!!

    As a reminder – make sure that you watch your oven when you are browning the bread. My oven isn’t the BEST when it comes to browning items. I always have to stay on top of anything I put in my top layer. I’m asking Santa for a new oven next year!! Seriously.
