Lemon Blueberry Bread Recipe – Perfect For Company

This lemon blueberry bread recipe topped with a simple glaze is the perfect dish to make when you are looking for something fresh and sweet. An easy bread recipe that is filled with bright flavors and sweet fruit. 

I often make this lemon blueberry loaf cake during the warmer months of the year, but don’t let that stop you from baking this sweet treat all year long. It’s a great way to get rid of fruit that no one is eating. Once you put it in sweet bread, I promise you that your blueberries will go.

Bread Ingredients

  • 1-1/2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 fresh lemon
  • 1-1/2 cups fresh blueberries, divided

Glaze Ingredients

  • 1/2 cup powdered sugar
  • half of a fresh lemon

Directions: 

Preheat oven to 350 and grease a loaf pan with nonstick cooking spray. 

In a medium bowl, combine flour, sugar, baking powder, and salt and mix well. Add milk, vegetable oil, egg, and vanilla extract and mix. Zest the lemon and squeeze the juice into the batter. Fold in 1 cup of blueberries into the batter. Pour into prepared loaf pan. Top with remaining blueberries.

Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Let the bread cool completely.

Once cool, mix 1/2 cup powdered sugar and 1 tablespoon lemon juice to start in a small bowl. Mix and if that’s not enough, add a teaspoon at a time. This will help your glaze remain thicker. Drizzle on top of the bread, slice and serve.

Tips and Variations:

  • If you’d like to add more lemon flavor, consider adding additional fresh lemon juice or lemon extract. 
  • Store leftovers in an airtight container.
