Inside The Kitchen: Cowboy Caviar

A Facebook friend of mine sent along her recipe for ‘Cowboy Caviar’. I LOVE the name of this dish!!! LOL – looks easy enough. Chop and serve with chips!

For the dressing (make fist & let sit):

* 2 tbs red wine vinegar
* 1 clove pressed garlic
* 2 tsp olive oil
* 2 tsp hot sauce
* 1/4 tsp pepper

Ingredients:

* 1 can black beans -drained & rinsed
* 1 can sweet corn -drained & rinsed
* 3-4 Roma tomatoes
* 1 bunch cilantro
* 3 green onions
* 3 firm avocados

Chop veggies, then mix all ingredients in a large bowl.
Add dressing last minute before serving.

*It’s best to make this the same day you’re serving; otherwise the avocados get all brown and gross :/
