There are a few shortcuts you can take to make this easy fried recipe easier than noted below. If you don’t want to cook the rice fresh, you could always opt for frozen rice.
I often turn to Trader Joe’s frozen rice in a bag. I am a rice SNOB and I am telling you that the product does not disappoint.
Personally, I use a rice cooker. I highly suggest buying one. My rice cooker was literally $30 and I use it ALL THE TIME OMG. If you are a multitasking kind of girl, I heard that people go bananas for the Instapot – which is also a rice cooker (plus a million other things) – but I don’t own one of those which means I can’t personally speak to it.
Either way, kitchen tools, and gadgets are timesavers.
I usually make this simple fried rice recipe as a main meal since it already has a protein incorporated into it. You could serve it with some dumplings or a ginger salad if you want to add a little variety to the table.

Chicken And Rice Stirfry Ingredients
- 4 cups white rice, cooked
- 1 large chicken breast, cubed and cooked
- 2 tablespoons oil
- 1 cup frozen peas and carrots
- 1/4 cup diced onions
- 1 tablespoon garlic cloves
- 2 eggs, beaten
- 1/4 cup soy sauce
- chopped fresh cut green onions, optional for serving

So, I just want you to know that I opted for frozen peas and carrots because they are LIFESAVERS. I don’t particularly like the canned version for this recipe, but if that is all you have then go for it.
Heat your oil in a large skillet and add your peas and carrots, onions, and garlic. “Fry” mixture until onions are tender and begin to brown.
This is probably the hardest part of this easy fried rice recipe and we all know that nothing was hard up to this part, right?
Push your simple fried rice mixture aside in the pan and make room for your eggs. Slowly add in your scrambled eggs. Cook your eggs and then mix with the rest of the pan.
Add chicken, rice, and soy sauce to the pan. Make sure you continue to cook until everything is heated through.
Here is a pro tip. Sometimes, if I don’t have time to make chicken for dinner, I get one of those rotisserie chickens at the grocery store and shred it after removing the skin. All the work is done for me!
If you don’t feel like making chicken for this dish, you could either grab one of those rotisserie chickens or use whatever leftover meat you have in the refrigerator. Anything works in this rice recipe.
