Doughnut Ingredients
- 2 cups flour
- 1/2 cup granulated sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup red sugar sprinkles
- 2 tbsp crushed freeze-dried strawberries
- 2/3 cup chopped strawberries
- 1/4 cup (+ 2 tbsp) vegetable oil
- 3/4 cup buttermilk
- 2 large eggs
- 1 tbsp honey
- 1 tbsp vanilla bean paste
Glaze Ingredients
- 2 cups powdered sugar
- 3/4 cup finely chopped strawberries
- 1/2 cup crushed freeze-dried strawberries
Additional Ingredients for Trifle
- red, pink & white sugar sprinkles
- 1 cup sliced strawberries
- whipped cream
Instructions
- Preheat oven: 350 degrees F.
- In large mixing bowl, combine flour, sugar, sprinkles, freeze-dried strawberries, baking soda, and salt.
- In medium mixing bowl, combine buttermilk, vegetable oil, honey, vanilla bean paste, and eggs.
- Pour wet mixture into dry mixture. Fold slowly with spatula.
- Add chopped strawberries to dough mixture. Fold slowly with spatula.
- Pipe dough into mini doughnut pan. Fill about halfway.
- Bake for approximately 16-18 minutes (or until center is not doughy).
- In small mixing bowl, combine powdered sugar, freeze-dried strawberries, and pureed strawberries. Mix well with spoon.
- Remove doughnuts from oven. Let cool for a few minutes on cooling rack.
- Dip each doughnut into glaze. Place on rack so excess glaze can drip off.
- Add sprinkles to doughnuts. Place in refrigerator if desired.
Mother’s Day Trifle Instructions
- Save at least 8 non-glazed, plain doughnuts for the trifle.
- Add handful of sliced strawberries into the bottom of mini trifle dish.
- Place 8 doughnuts on top sliced strawberries, against glass, forming a circle.
- Add whipped cream.
- Add sliced strawberries.
- Add glaze.
- Add whipped cream.
- Add glaze.
- Top off with 1 glazed and sprinkled mini doughnut. Enjoy!
