Doughnut Ingredients

  • 2 cups flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup red sugar sprinkles
  • 2 tbsp crushed freeze-dried strawberries
  • 2/3 cup chopped strawberries
  • 1/4 cup (+ 2 tbsp) vegetable oil
  • 3/4 cup buttermilk
  • 2 large eggs
  • 1 tbsp honey
  • 1 tbsp vanilla bean paste

Glaze Ingredients

  • 2 cups powdered sugar
  • 3/4 cup finely chopped strawberries
  • 1/2 cup crushed freeze-dried strawberries

Additional Ingredients for Trifle

  • red, pink & white sugar sprinkles
  • 1 cup sliced strawberries
  • whipped cream

Instructions

  • Preheat oven: 350 degrees F.
  • In large mixing bowl, combine flour, sugar, sprinkles, freeze-dried strawberries, baking soda, and salt.
  • In medium mixing bowl, combine buttermilk, vegetable oil, honey, vanilla bean paste, and eggs.
  • Pour wet mixture into dry mixture. Fold slowly with spatula.
  • Add chopped strawberries to dough mixture. Fold slowly with spatula.
  • Pipe dough into mini doughnut pan. Fill about halfway.
  • Bake for approximately 16-18 minutes (or until center is not doughy).
  • In small mixing bowl, combine powdered sugar, freeze-dried strawberries, and pureed strawberries. Mix well with spoon.
  • Remove doughnuts from oven. Let cool for a few minutes on cooling rack.
  • Dip each doughnut into glaze. Place on rack so excess glaze can drip off.
  • Add sprinkles to doughnuts. Place in refrigerator if desired.

Mother’s Day Trifle Instructions

  • Save at least 8 non-glazed, plain doughnuts for the trifle.
  • Add handful of sliced strawberries into the bottom of mini trifle dish.
  • Place 8 doughnuts on top sliced strawberries, against glass, forming a circle.
  • Add whipped cream.
  • Add sliced strawberries.
  • Add glaze.
  • Add whipped cream.
  • Add glaze.
  • Top off with 1 glazed and sprinkled mini doughnut. Enjoy!
