I had such a great night out in NYC with my husband all thanks to Bertolli® learning about the new Bertolli® Rustic Cut™ Pasta Sauces. It all started out with an amazing dinner on the Penthouse level of the Gramercy Park Hotel. I cannot tell you how much fun we had! Between wine tasting and sampling the brand new Rustic Cut Pasta Sauces line of tomato sauces, I was in heaven. I also had a chance to interview Sean and Catherine Lowe from The Bachelor. Catherine teamed up with Bertolli to create some custom recipes for the brand’s website. All in all – a great night out with excellent food and company.
I am a “make the sauce on Sunday” kind of girl. Yes, I’m Italian. Yes, I’m from NYC. My grandmother used to call it gravy. That’s something I honestly miss hearing if I really think about it. Every Sunday, we would meet at her house for some fusilli and gravy. To this day, it’s my favorite combination from Italian cuisine.
So, when I got invited to break bread with some friends and fellow bloggers, I jumped at the chance. I’m always looking for new inspiration when it comes to cooking. As a work-at-home mom, I still want to make great tasting meals and sometimes we all get caught in a rut. Just being honest! I think I make the same 8 recipes over and over again. It is definitely time to add a few new additions into the mix.
And … I got to do it with my husband by my side. I love that he is blogging now! Super awesome! He typically mans the grill, but every now and then I can get him on chef duty as well. So, the two of us went into the event with our minds open to new taste possibilities.
And BOY did Bertolli Rustic Cuts Pasta Sauces not disappoint!! The new Bertolli® Rustic Cut™ Pasta Sauces are full of hearty, thick-cut vegetables you can see and taste. Not only did the sauce not disappoint, but the NYC dinner didn’t either. We started off with a Tuscan Salad and indulged in fresh bread dipped in tomato sauce. It didn’t need anything else, mind you! The sauce brought so much flavor that it made the perfect appetizer. Then, the dinner became family style – which I ALWAYS LOVE. The options were a roasted branzino, chicken cacciatore, with a side of seasonal polenta and cavatelli pasta. I couldn’t get enough!! Every dish brought it’s own unique vibe and had my brain spinning with ideas to bring home to the kids.
Before I go any further, here is a quick recipe for Chicken Cacciatori. Make it tonight!
Chicken Cacciatori Recipe
- 4 boneless skinless chicken breasts
- 1 teaspoon Italian seasoning
- salt and pepper
- 2 tablespoon olive oil, divided
- 2 cloves garlic, minced
- 1 yellow pepper
- ½ cup chicken broth (optional)
- Season the chicken with Italian seasoning and salt and pepper. In a large skillet, add 1 tablespoon olive oil and heat to medium-high. Cook the chicken about 3 minutes on each side or until brown. Set the chicken aside on the plate.
- Add one tablespoon olive oil to the skillet and add the garlic, bell pepper, and mushrooms. Sauté until tender. Salt and pepper to taste. Add entire jar of Bertolli® Rustic Cut™ Pasta Sauce. Simmer until thickened. If you think the sauce needs more liquid, use the chicken broth. Otherwise, leave it be.
- Add the chicken back to the skillet until heated through. Serve over hot pasta. Enjoy!
Ok, now that I got that out of the way, I want to get back to the dinner and all the flavors we enjoyed thanks to Bertolli! The Rustic Cut Pasta Sauces were fabulous! Listen, I’ve been approached by several jarred tomato sauce brands in the past to collaborate and I’ve always said NO out of respect for my grandmother. This isn’t a lie. I’ve turned down CASH because I didn’t want to promote something that didn’t taste good or was worthy of my dining room table.
