Inside The Kitchen: Turkey Burgers

You know my cousin Erica who has the sickest body EVER and who makes me so jealous that I want to give her100 paper cuts and then pour lemon juice all over her? What? You didn’t know I was crazy?

Well, anyway – she came over the other day to show me one of her favorite healthy meals – the turkey burger. But her version is SO FLAVORFUL! My goodness – I had three of them (which I think completely misses the point… but I’m a work in progress).

Here’s the recipe:

Ingredients:

  • 1/2 pepper diced – yellow if you have it
  • 1/4 red onion diced
  • 1/4 cup sun dried tomatoes – diced
  • 1/2 cup Jack Daniels Honey Smokehouse
  • 1 1/2 pounds ground turkey organic
  • 1/4 feta
  • 3 tablespoons of bacon bits
  • 1 cup breadcrumbs (more if it’s too wet for you)
  • 2 tablespoons of oil
  • Salt and pepper to taste

Optional toppings: (and when I say optional I don’t mean it): roasted pepper hummus or guacamole

Step 1: Dice all veggies

Step 2: Place turkey in mixing bowl and add sauce and breadcrumbs.

Step 3: Saute tomatoes, peppers, onions and bacon bits in oil for a few minutes.

Step 4: Pour everything together and mix. (are you seeing how easy this is?)

Step 6: Cook through. Serve on 100 calorie bun and top with either roasted pepper hummus or guacamole. Or you can be like me and top with BOTH!

Yuuuum! Love turkey burgers, i don't normally put sun dried tomatoes, but i'm sure going to try that next time. The only question i have : Where did feta go????

Forgot to say that if you add fresh chopped coriander to this ---- simply yuuum. And if you don't have breadcrumbs ,you can use smashed crackers or chrisprolls(i use wholegrain - healthier :-))) )
