My cousin Erica came over and made Onion Focaccia! It was SO GOOD. Here’s how she did it.
Step 1: Preheat oven to 400 degrees. Flour a clean surface and roll out 1 pound of pizza dough in a 10×15 rectangle – or as flat as you can get it.
Step 2: Mix 1/4 olive oil, 2 tablespoons of rosemary, 1/2 teaspoon of red pepper flakes, and a punch of sea salt. Brush half of the herb oil onto the dough and let sit until about 1 hours. {Editor’s note: we didn’t let it sit – but the recipe suggests it}.
Top with 3/4 diced onion, and shaved Parmesan cheese. {Editor’s note: we added Feta to the mix and topped with Oregano}
Step 3: Bake for 10 minutes. Take out and use remaining olive oil to coat dough. I focused on the crust. Place back into the oven and bake for an additional 15 minutes.
