Inside The Kitchen: Greek Chicken Salad With Rice

Greek Chicken Salad w/ Rice

Rice:
I browned one cup of basmati rice in olive oil, added some lemon juice and cooked as normal

Chicken:
I marinated my chicken in:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon dried oregano
  • 2 freshly minced garlic cloves
  • Salt and pepper

(I ended up adding a little bit more to thoroughly coat my chicken)

I got the chicken in the oven to broil for about 7 minutes on each side

Meanwhile… I made my fresh veggie salad and tzatziki

Salad:

  • Chop up 2 cucumbers (peeled and de-seeded)
  • 2 roma tomatoes
  • About 10 grape tomatoes
  • Red onion sliced very thin (to your liking)
  • Small handful of parsley chopped super fine
  • Diced/crumbled a 1/2 brick of feta cheese

Tzatziki sauce:

  • Greek yogurt
  • Peel, de-seed and drain one cucumber
  • Tablespoon of olive oil
  • Tablespoon of red wine vinegar
  • About 5 garlic cloves minced

Once the chicken was cooked, I let it cool and cubed it. I added the chicken to the veggie salad and tossed it. I served the chicken salad with tzatziki and rice, once it was on my plate- I mixed it all together and it was AMAzing!
