Greek Chicken Salad w/ Rice
Rice:
I browned one cup of basmati rice in olive oil, added some lemon juice and cooked as normal
Chicken:
I marinated my chicken in:
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon dried oregano
- 2 freshly minced garlic cloves
- Salt and pepper
(I ended up adding a little bit more to thoroughly coat my chicken)
I got the chicken in the oven to broil for about 7 minutes on each side
Meanwhile… I made my fresh veggie salad and tzatziki
Salad:
- Chop up 2 cucumbers (peeled and de-seeded)
- 2 roma tomatoes
- About 10 grape tomatoes
- Red onion sliced very thin (to your liking)
- Small handful of parsley chopped super fine
- Diced/crumbled a 1/2 brick of feta cheese
Tzatziki sauce:
- Greek yogurt
- Peel, de-seed and drain one cucumber
- Tablespoon of olive oil
- Tablespoon of red wine vinegar
- About 5 garlic cloves minced
Once the chicken was cooked, I let it cool and cubed it. I added the chicken to the veggie salad and tossed it. I served the chicken salad with tzatziki and rice, once it was on my plate- I mixed it all together and it was AMAzing!
