Daily Diary: I Actually Cooked A Meal Today


I haven’t made spanish rice in… ages. I’m pretty sure it’s been about 8 years since I’ve attempted to make this dish. I broke my rice cooker and haven’t been able to perfect the consistency of the dish ever since. However, this morning, I decided it was time to whip out the Sazon and Adobo and get to work.

I haven’t added the diced chicken pieces or olives yet – I will do that right before we eat. But this dish reminds me of college! I suddenly have the urge to call up my friends and invite them over for a bowl. Isn’t if funny how certain food can do that to you? I didn’t have many recipes under my belt when I lived away while in school. This was on our weekly rotation… and I mean every single week!!
