Creamy Turkey Tortellini Soup Recipe

Chicken tortellini soup is one of those soup recipes that my kids beg me to make time and time again. A great recipe for a chilly day and one that the whole family will enjoy. The next time you are in the mood for something hearty, make this spinach tortellini – a comforting soup for a busy night.

Creamy Turkey Tortellini Soup Recipe

Whenever I have turkey leftovers, I always try to come up with a turkey soup recipe for a weeknight meal. This creamy tortellini soup does just the trick! It’s one of my favorite soups to make on a rainy day.

Ingredients:

  • 2 tablespoons olive oil
  • 1 cup chopped carrots
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 1lb lean ground turkey
  • 2 tablespoons Trader Joe’s sofrito seasoning
  • salt and pepper
  • 1 box, 32 oz, creamy tomato soup
  • 1 package, 9 oz, dry tortellini cheese-filled pasta 
  • 1 packed cup fresh baby spinach
  • 1/4 cup of heavy whipping cream

Directions: 

Add oil, carrots, onion, and garlic to a large skillet. Cook through. Then add in your ground turkey and continue to heat over medium-high heat, mixing occasionally until the turkey is no longer pink and browned.

Add seasoning, salt, and pepper and mix well. Stir in tomato soup and tortellini pasta. Bring mixture to a boil and cover. Reduce heat to low and heat for 5-8 minutes or until tortellini is cooked.

Fold in spinach and stir until wilted. Remove from heat and stir in heavy whipping cream and serve immediately.

Tips and Variations:

  • If you don’t live near a Trader Joe’s, you can make the seasoning by combining minced onion, garlic powder, parsley, crushed red pepper, rosemary, sage, and chili powder. You could also just add additional Italian seasoning. 
  • When reheating, be sure to add some chicken broth to give it more liquid. 
  • Serve with a fresh loaf of crusty bread. Crusty French bread always works with creamier soup. 
  • If you’d like to add more vegetables, consider green beans and additional fresh spinach. 
  • Top with parmesan cheese, fresh basil, or fresh thyme. 
  • I prefer to use yellow onions for this recipe, but you could also use white. 
  • Bay leaves will also change the flavor profile of this cold winter night dish.
  • This easy meal could also make a great appetizer during holiday time for family and friends. 
  • Store leftovers in an airtight container. Heat up the next day with added liquid and additional seasoning to ensure the best flavor shines through.
