Blueberry Pie Bars Recipe – Summer Dessert Recipe

This Blueberry Pie Bars recipe should definitely get added to my 50 Things To Eat This Summer: Bucket List, right? I mean, doesn’t it just SCREAM BBQ or PICNIC? I think so! I love a good fruit recipe. A summer dessert is right up my alley and this treat is a sweet as can be. For this dish, we actually use pie filling so you won’t be spending that much time in the kitchen – I promise. But the results will be spectacular!

So, how do you make these blueberry pie bars? Let’s get right to it. And by the way, I eat pies all year round – especially this one since it doesn’t require a fresh middle. Pie filling comes in a can which means that it’s available all year long no questions asked.  And honestly – I truly think that bars are easier to make than pies! After all, if you sneak a piece before all the guests arrive, no one will know. LOL

Blueberry Pie Bars ingredients

Blueberry Pie Bars Recipe Ingredients

  • 2 Cups Sugar
  • 1 Cup Butter, softened
  • 4 Eggs
  • 1 teaspoon of Vanilla
  • ½ teas. Salt
  • 3 Cups Flour
  • 2 21 oz. Cans Blueberry Pie Filling
  • Powdered Sugar

Summer Dessert Recipe Directions

Blueberry Pie Bars Recipe

Preheat oven to 350˚.

In a large bowl cream together the Sugar and Butter. Blend Eggs in two at a time until smooth. Add Vanilla, Salt and Flour combine until all flour is moistened. Spread ¾ of the mixture over a greased low rimmed baking sheet.  Spread using a silicone spatula sprayed with cooking spray so the dough doesn’t stick, reapply as necessary. Spread the Blueberry filling over the dough.

Pour Blueberry Pie mix into pan

Spread the remaining dough randomly over the filling by the spoonful. Bake at 350˚ until the dough is golden, approximately 50-60 minutes.

Remove and let cool.  Cut into squares and dust with Powdered Sugar just before serving.
