Roasted Corn Salsa Recipe: Easy And Delicious
I love having last-minute guests. No really – I’m not being facetious. My house has an open door (not literally – I’m a jaded NYer and trust no one) and I LOVE to have guests stop by unannounced or with very little time to plan for the visit.
Because of this, there are a few recipes that I need on hand to help me nourish and entertain. FRESH salsa is one of them!

Ingredients
- 12 oz. Frozen Corn
- 4 Roma Tomatoes, seeded and diced
- 3 Jalapenos, seeded and diced
- 1 Small Yellow onion
- 2 Limes, juiced
- 4-6 Sprigs of Cilantro leaves, chopped
- 1 teas. Salt
- ½ teas. Pepper
- ½ teas. Cumin
How To Make Roasted Corn Salsa
In a nonstick pan over medium high heat add the Corn and stir occasionally until browned. The sugar will caramelize on the bottom of the pan so don’t scrape just lightly stir.
Remove from heat to a large bowl and add the remaining ingredients and stir to combine. Let cool and serve or refrigerate in an airtight container. Stir before serving.
